The two volumes of Anna Thomas' "Vegetarian Epicure" are still - after more than 30 years - the cookbooks I turn to most often. Her soups are excellent, especially her gazpacho which I usually make three or four times every summer.

My favorite recipe to make at home is eggplant lasagna. I've made it probably 20 times for friends and family. I make it with soy cheese, and it has lots of veggies in it. It's pure comfort food - perfect for a fall evening!

1 1/2 tbsp maple syrup
1 1/2 tbsp dijon mustard
4 oz firm tofu sliced 1/2 in. thick
2 cups frozen stir fry veggies
1 tbsp. chives
1 tbsp. basil
salt & pepper to taste
1 cup precooked brown rice
mix first 2 ingedients & coat tofu to grill or broil for 5 minutes
Steam veggies & salt & pepper.
mix chives & basil into rice.
ENJOY

Hi! I'm Heidi, I'm 19 and I have been a Vegetarian since I was 13. And a couple of months ago I decided to get serious about my eating habits, and it has been the best decision for me! I feel so much better physically and mentally. Cooking is one of my joys and when I have a free minute here and there I am searching online and in books for new and fun recipes! My favorite food is Lasagna, so naturally I created a new recipe using a spinich sauce, including zucchini and cauliflower! And it is delicious!

I love making pasta and beans with tomato sauce. It's the ultimate comfort food, especially when I load up the sauce with mushrooms, carrots and onions and, my favorite, garlic.

I grew up in a house full of kitchen book, from the greatest encyclopedia of french cuisine to the latest trends in molecular recipes. Unfortunately, I couldn't find (in my home or at the store) a real ''bible'' of vegan food. I think that I have now and really would like to win it! So, my favourite recipe I would like to share must be this simple desert: apples-au-four! Simply take an apple per person. Carefully take away the hearts by digging with a sponn (and do not pierce the bottom of the apples). Fill the hole with brown sugar, dried raisins, a little bit of margarine and maple syrup. Simply put in the oven at 350 until you reach the desired consistance (wheter you like your apples still crunchy of more tender) for about 30-45 minutes and voilà! Bon appétit!

I've browsed this cookbook, it is fabulous - I would love to have it!
My current favorite recipe that was so so so easy to make I found in a vegetarian times magazine: Raspberry Fool
(the original recipe called for greek non-fat yogurt, but I substituted soy yogurt to great success)
8-10 ounces of raspberries (frozen or otherwise)
3 tbs. of honey
1/8 c. of sugar plus a little stevia (stevia also my substitution)
1/2 tsp almond extract
2 tbs. orange zest
2 tbs. sliced almonds
1. Bring raspberries, sugar and stevia to a boil in pan. Simmer about 10 min. Chill in a bowl for 10 min.
2. whisk in a bowl yogurt, honey, almond extract and zest. Fold in the berry concoction for a marbled effect. (Leave a little sauce for garnish alond with slivered almonds)
It is so good, so fast, so easy.

I do not have a favorite vegan recipe because i simply love too many to choose from, but i do have a favorite vegan dessert. Its called Vegan Pzookie! A Vegan Pzookie consist of a big cookie, vegan ice-cream, and vegan chocolate fudge. You may change the ice-cream and cookie type to your own personal choice. You preheat your oven first. You bake the cookie to whatever amount you may like. When the cookis is done serve it warm, add 3 scoops of ice-cream on top of cookie then add the chocolate syrup! Bon Appetite!

My favourite recipe to make is homemade soup. There are a variety of basic vegan soup recipes that I like and I often jus throw in whatever vegetables I have in the house, so the end result tastes different every time!

Hi! One of my favorite recipes at home is a version of espinacas garbanzos, or spinach with chick peas. I usually use onions, garlic, a good amount of olive oil, spinach, chick peas, and sometimes a splash of tamari, some hot chili paste, a little curry powder...it's very versatile. :)

It would change my life to win this cookbook. I still eat eggs and cheese and am overweight. I'm proud to be a vegetarian, but I'm guilty of doing great harm to my body by eating such high fat foods and I'm especially guilty for harming the animals I profess to love by eating eggs and dairy. I'm stuck thinking that I will never enjoy eating again if I have to give up real cheese. Please help me change my mind! In turn, I will do my best to change the minds of the people in my life (who profess to love animals, but continue to eat them).

Dear VegCookingBlog or PETA,
Perfect for Fall, my favorite Vegan Recipe is a main dish with Butternut Squash, and EASY.
What you need:
Large Pan, Large Casserole Dish
Preset Oven for 400-450
Vegetables:
Butternut Squash 1/2 cut into 1 in. cubes, use the other half for next time.
Zucchini, use 1/3 and slice
1 Medium sized Red Onion chopped
1/2 Red pepper chopped
2 Garlic Cloves minced
Additional: you can add whatever vegetables you like.
Mushrooms, frozen peas and carrots, Cauliflower
Then add Salt and Pepper and mix all together and scoop vegetables into the Casserole Dish
Cook for 55 min. or until squash is tender.

I love to make Vegan stuffing for my whole family. They are meat eating, but they really enjoy it and I know it is a step in the right direction! My influence, activism, and example are vital to helping animals. I can also help humans become more enlightened about the harm and death that we inflict on a daily basis. Though I do a lot of "big things" outside of the home, small steps make a difference too inside the home!

My wife loves it when I make sushi. Everything is vegan and there's no fish or fish eggs. It's just nori, sushi rice, and various fruits and vegetables wrapped together. It's fantastic.

I love to make vegan chili and I put in 3 different types of beans and also add in lots of chopped zucchini & carrots as well as tomatoes, peppers, & corn. Of my in-laws only my niece who lives out of state is vegan and when she came for a recent visit I made a large crock pot full for a large family gathering at my mother in-law's home and let my niece know there wasn't any meat in it so it was safe for us to eat. My other in-laws couldn't believe how great it tasted and still don't believe there wasn't any meat in it. The best testament was the fact that of all the dishes that night the only thing that didn't have any leftovers was my chili!

My favorite recipe calls for vegetables, mostly yellow squash and zucchini grown in our own backyard. My husband and I spend a lot of time watering, weeding, watching and loving...loving the Earth that gives us these amazing plants, loving the weather that shines upon us, loving the animals that play around us, and loving each other in this life. Our recipe calls for: fresh home grown veggies, love and a smile. Works out to a fantastic dinner every time and so easy to make!

We were eating depression style before it was cool.
Here is my favorite:
EGGLESS, MILKLESS, BUTTERLESS CAKE
3/4 cup brown sugar
1-1/2 cups water
1/3 cup vegetable oil
1 cup raisins
1 apple, cored and chopped
2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
2 teaspoons water
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
Combine sugar, water, oil, raisins, apple and spices. Bring to a boil in saucepan or in microwave. Remove from heat and let cool for 10 minutes. Dissolve baking soda in 2 teaspoons water. Add to raisin mixture (it will foam). Add remaining dry ingredients. Mix well. Pour into a greased 9-inch-square pan and bake in 325 degree oven for 50 to 55 minutes. Let cool at least 10 minutes before serving.

potato leek soup: cook onion, carrot and celery in pan add 2 leeks garlic and 2 large or 4 small potatoes, salt, pepper and 4 c water and 4 c veggie stock. bring to boil, reduce the heat and let simmer for 30 minutes. blend with immersion blender or spoon into regular blender until smooth.

I love many of the same dishes as many of you have mentioned.However,I've only been a vegetarian for a little over two years.When I decided to give up meat, the one recipe I thought I'd miss the most was chicken&dumplings. Then I figured out how to make it with the veggie chik'n strips.No,it doesn't taste like grandma's,but it satisfies my craving for dumplins and it's healthier too! I would love to have the book to learn more vegan recipes. It would be a
big help in making the transformation from vegetarian into vegan.

I am new to the vegan lifestyle, I have been vegetarian for a while. This would be a great book to start my collection. I am always trying to find recipes I can make for my kids.

My favorite thing to cook at home is "chicken Parmesan" . I use Morningstar Farms chicken patties, a little marinara and soy cheese. I bake the patty according to the directions, top with marinara, cheese and then put it back in the oven until the cheese melts.

My favorite vegan recipe to make at home is hamburger helper. I use a creamy cheddar soy cheese and boca crumbles with some canned diced tomatoes and a packet of taco seasoning...mmmmmm, it's soooooo good!

My favorite vegan recipe is caulimash
You take one bag of frozen cauliflower and stem until tender.
Mash the cauliflower with a fork add fresh cracked pepper, powered vegetable broth, and nutritional yeast to taste.
This is a very simple side dish and it is so good for you.

It's difficult to pick a favourite, but back when I first became vegan I quickly became tired of stir fries and veggie burgers, and discovered I didn't have to give up some of my favourite dishes from before, including General Tao's chicken. I found a great recipe that called for frozen tofu in place of chicken, and have since tried it with chik'n strips, seasoned frozen tofu and seitan. The meat was never my favourite part of any of the dishes I ate before (BV), so it is easy to come up with a replacement that I do like for any of those type of recipes. I'd say this was one of my first favourite specifically vegan recipes (though I added a bunch of veggies to the sauce).

I am always looking for quick and easy vegan recipes. I love websites such as www.vegweb.com where average people post their vegan recipes with pictures and users rate them. This way I can find simple meals to make with simple ingredients and I know they'll be yummy!

My favorite recipe to make at home is Thai curries. Take a can of coconut milk, vegan curry paste (red, masaman, or panang are my favorites) and viola! Thai curry. serve over brown rice with steamed broccoli.

My favourite vegan receipe is my Vegan Spagetti Bolognaise
Using dried soya protein, soaked in boiling water until tender. Diced onions fried until translucent in olive oil, diced sweet baby plum tomatos, grated carrot, sliced mushrooms, tinned chopped tomatoes, tomato puree, bay leaves, chopped garlic, a little lo-salt to taste and a slight dash of hot pepper sauce, served with chopped fresh oregano and black pepper, and with wholemeal spagettini pasta!
It makes for a really tastey and hearty winter meal for days when you feel either like cuddling up next to a nice warm fire, or for days when you feel truely starving!!!

I make terrific vegan fajitas. They are my signature dish. I use the Ezekiel sprouted grain tortillas, stir up some delicious red, green, and yellow peppers along with mushrooms and red onion (you can throw in some small extra firm tofu cubes too), season with garlic, salt, pepper, paprika, and cayenne, add some slices of home-grown avocado, and voila! YUM.

My favorite lunch: take a Vidalia chopper and chop some carrots, onion, broccoli, zucchini, cucumber, tomato, cauliflower and green pepper. Add some mixed nuts and a little dressing. All bite sized and delicious.

I just started the vegan lifestyle a few weeks ago, and I have been a vegatarian for a little under a year. Last week though I found a cupcake recipe that called for chocolate mouse topping. It was mostly made of tofu, chocolate, and soy milk but it was sooooooo good. I never thought I would be having tofu in my cupcake!

I honestly don't have a fav vegan meal; but I've recently decided that I'd like to try and be a vegan. My mom is gravely ill and I believe that part of what got her there was her diet.

Vegan Pumpkin Pie
1 vegan pie crust
½ cup sugar
4 Tbsp cornstarch
1 tsp cinnamon
½ tsp ginger
1/8 tsp cloves
½ tsp salt
1 15-oz can solid-pack pumpkin
1 ½ cups soy or rice milk
Preheat oven to 350F. Stir together dry ingredients in large bowl. Blend in pumpkin and milk. Pour into crust, bake 45 minutes.

Ummm, so much healthier than chicken. I make it with garlic and onion laced mashed redskins and sauteed spinach!
I press and freeze the tofu and then after thawing I marinate it in a little soy sauce. Cover with a little homemade batter (flour, nutritional yeast, parsley, dried onion, salt and pepper) and fry in a small amount of olive oil!

I have so many favorite recipes, it's hard to choose! But I have to say that I love things that are super easy (and sweet!), so here's one: whoopie pies.
3 tsp Ener-G Egg Replacer
4 tbsp warm water
Vegan-friendly chocolate cake mix (Duncan Hines?)
1 cup Earth Balance
1 bag vegan semi-sweet chocolate chips
Preheat oven to 350. Whisk egg replacer and water in small bowl until frothy. Add to large bowlfilled with remaining ingredients and stir until all powders wet. Refrigerate for twenty minutes. Take an ice cream scoop to drop large balls of dough on greased cookie sheet. Bake for 9-12 minutes, or until hot and gooey. Let sit 5 minutes before eating.

MY favorite vegan recipe is vegan chocolate chip cookies from the Skinny Bitch in the Kitch book. I love the fact that it uses whole wheat flour and, instead of eggs, it uses molasses. It doesn't even use Ener-G egg replacer, which speaks to how natural the recipe is. (although I don't mind using ener-g).

I love making tofu cheesecake. So creamy and delicious, it's even better than the real thing! And when I've served it to guests they've agreed it's tasty and looks really nice too (I usually dress it up with a sprig of mint and a few fresh berries). The perfect dessert!

I gave up meat for health reasons several years ago, and a year ago was challenged to go the whole way and become vegan. It is probably the single best thing I have done healthwise, and not only for me, my husband is happy to go along with it. We both feel better and, happily, look better! Our favourite meals are curries served with brown rice.

Sounds like such a great book. I am a vegetarian right now and am wanting to become vegan. I need to learn some recipes. I wish I had a favoriate to post and soon I will have some to share. I am sure I will have to catch myself at first making sure not to add butter or cheese..or not to eat out with anything cooked in it.I am a pizza lover ( cheese ) maybe there are other pizzas I can fix at home that are vegan..even if not, It is important to me to do this because so many animals suffer for dairy products as well.

My favorite is to roast fresh tomatoes, onions and zucchini with olive oil and garlic. Then I toss it with pasta or spoon it over rice. I've also added veg broth to it and made a nice soup. It's a great basic that I can do very quickly after work.

Mmmmmmmm.....So many to choose from, but my current personal favorite is:
Butternut Squash Ravioli
1 1-lb. butternut squash
Salt & pepper
9 Tbsp. vegan butter
1/3 cup finely chopped shallot
1 tsp. finely chopped sage
PLUS 2 Tbs. thinly sliced
leaves & 8 whole leaves
1/4 cup smashed silken tofu
1/4 cup plus 4 Tbsp. vegan
Parmesan 'cheese'
Pinch of nutmeg
48 wonton skins
1. Cook halved squash (seeded
& seasoned w/salt & pepper)
flesh side down on a baking
sheet about 40 minutes til
tender. Scoop out flesh &
puree.
2. Melt 'butter' in skillet &
add shallot; cook about 3
minutes. Add chopped sage,
squash puree, tofu & 1/4 c.
'Parmesan'. Season w/salt,
pepper & nutmeg; cook for 1
minute more. Remove and
let cool.
3. Put 1 wonton wrapper on
plate (keep the rest cover-
ed w/a damp cloth) & brush
with water. Add 1 tsp. of
squash mixture, centered.
Top w/another wonton & seal
(remove air bubbles!) Cut
with a 3" round cookie cut-
ter. Make sure to keep the
completed ravioli covered!
4. Boil ravioli about 4 min.
(gently stir them so they
don't stick together) and
carefully drain.
5. Brown remaining 'butter' in
skillet over very low heat
& add sliced sage. Cook
about 5 minutes.
6. Put ravioli on plates and
top with sage 'butter' and
'Parmesan'. Viola!

My favorite recipe is from Viva le Vegan by Dreena Burton. It is the Sunflower Lentil Pie. I've made it dozens of times for friends and family and never hear an unkind word about it. Although that may have more to do with my friends and family than my cooking skills.

My favourite recipe has GOT to be the PPK's Chewy Chocolate Cookies simply because every non-veg I know loves them and admits 'Oh yeah, vegan food can be lovely after all...' Which is always a good little step in the right direction ;) Wait until they try my vegan lasagna! :)

i love to make vegetable soup
with tofu
first i boil all sorts of veggies until they are soft,i use:
carrots
potatoes
tomatoes
squash
then i add cubed squares of tofu
with some pepper seasonings and salt
its delish on cold days

Well I love food lol but I recently I made this one pasta dish and it was amazing kind of like ziti well any who it consist of pasta obviously, but try to stay with something smaller like penne or something like that cause you def do not want goo goo is eww lol well first you cook the pasta I like putting garlic in the water I cook the pasta cause it gives it the flavor without so many side effects as for what else goes in is the best instead of just getting red cherry tomatoes some stores also sell yellow ones which are a bit sweeter I like to get both I cut them in halves and usually the time I am done doing that my pasta is done and ready to be strained but leave some water you don’t want it to end up to dry when you are done straining your pasta I put it back on the stove and add a pinch of red pepper just to give it a little zip and I also add the tomatoes I earlier cut in halves mix that all up cause the heat from the pasta will cook the tomatoes you don’t want to overcook your tomatoes your not making sauce well after mixing everything get out a pan that you can put in the oven empty all ingredients into the pan and add your fav vegan chesses/or vegetarian I like mozzarella yumyum perhaps a bit of parmesan as well mix it so cheese is everywhere then sprinkle more on the top and put in the oven at like 350-325 until cheese browns...o and its also just as good without cheese so all you people out there that don’t like cheese will like this meal too

My stepson is coming home from college for Thanksgiving! He has only become a vegetarian in the last year or so and I have done pretty good with quick meatless dishes when he is home. I want to make this holiday even more special for him by including some new and creative and meatless dishes just for him.

Favourite really? Almost every vegan recipe is.. as weird as it sounds Maple Flax Seed Bread. Yuum! Yeast, whole wheat flower, flax, bran and wheat germ with some warm water or soy beverage. I used to sell it at a farmers market and people would love it so much that they ate the entire loaf before they got back to the car! :D

As a new Vegan, this would be absolutely awesome! My husband who swore that he would never follow suit, well, guess what?!?! I've cooked some absolutely awesome dishes and he is right in line with me now! He's feeling a lot better and he is enjoying my new creativity in the kitchen. So are the kids(minus the 8 yr old VegePhobe but we're working on him). Even my babysitter and her boyfriend are starting to fall in line! This sure would help to add to that creativity and keep them begging for more!

A favourite recipe of my homes is dahl. We have a very simple easy recipe that we eat at least once a week over rice and steamed broccoli but we can also jazz it up with a selection of potatoes, peas, corn, tomatoes, peanut butter (yes its good), orange juice, spinach, coconut milk... the list goes on and on and on.

I love cooking and particularly I love "veganizing" all the traditional recipes we have in Italy...But I think my masterpieces are homemade breads (bread is vegan by itself!) and all kind of cakes, cookies, muffins, cupcakes.... Yummy!

I love a nice rattatoui (best when it's from my garden) on top of some mashed potatoes (with the skins and some Better than Cream Cheese and Earth Balance mashed in).
But the ultimate vegan recipe is the vegan chocolate chip coconut cookies with a banana for the egg replacer! It's from La Dolce Vegan! Mmmmmm!

I've been a carnivore for sixty some years. Had a stroke for my troubles 13 months ago. My LDL was nearly 500, triglycerides nearly 900 and HDL neglible.
One year follow-up: LDL 47; HDL 48; triglycerides 101; BP 120/62 yesterday (vs. 160/120 or more for decades).
I gave up statins because of side-effects. Gave up red meat and nearly all poultry four months ago, substituting tofu. Gave up all dairy, use soy milk.
Amazing results in only a few months time!
Haven't lost much weight, but have more energy, sleep better, more positive frame of mind, all wonderful outcomes.
I'm now learning how to become vegan, a logical evolution from a lifetime of abuse to my body, not to mention the cost to critters over the past six decades.
Problems: (1) learning how to cook tasty meals the vegan way and (2) no $ to spare, so the book would be a real contribution to me in my journey toward more healthy eating.
Parenthetically, I've been delighted to find that I can more easily afford vegetarian food on limited income.
All those benifits ...crazy not to go the whole mile.

Recipe:
stir fry:
1 tblsp olive oil
minced garlic
snow peas
carrot, sliced
celery, 1 stem sliced

sliced summer squash (1)
firm tofu
tomatoe, beefsteak (1)
(off my own vine)
add in brown rice,
& barley mix
(pre-cooked)
sprinkle sliced almonds
over the finished mess
Nothing terribly creative but what has changed my clogged old arteries into free-flowing pipes!
My wife won't eat it, thinks it's boring. Finding interesting, aesthetically attractive recipes might win her over, and it sure would make my diet more fun!

Last week I was missing the meaty spaghetti sauce I used to make; and since I can't eat soy protein, I tried a combination of finely chopped mushrooms, olives, and walnuts. It was just like the sauce I loved in texture and just as filling. It's definitely a favorite now.

I would love to share a vegan dish I enjoy, however, I have yet to learn how to make any meals and still honor my desire to be cruelty-free to fellow species. I mean, even baking a cake leads me to using eggs which are harvested in an inhumane fashion and milk falls along the same line.
So for me, I need this recipe book to make living my desire a reality.

My favorite vegan recipe is called "apple cake" but it's actually more like a potato pancake in texture but not as crispy.
It's super easy too - wouldn't be surprised if there's a version in the cookbook!
All you do is mix shredded apple (I like it with granny smith apples), vegan margarine (I like Earth Balance), some cinnamon, maybe a little nutmeg, maybe a little allspice, water, sugar, and vegan flour. When you have a big ball of mush, you push it into a greased (margarine-d) glass pan and bake at 350 for about 40 minutes.

hard to pick one fave, but guess i'll go with the pancake recipe from The Farm Vegetarian Cookbook. we usually doctor it up with hemp seeds, ground flaxseed, walnuts, and whatever other fruit/nut/jam/etc sounds yummy that day, and smother the cakes with maple syrup we make ourselves, with sap from local trees-- mmmmm...

Tofu Stir Fry ..
Marinate Extra-Firm Tofu (after draining completely) in spicy Teriyaki sauce with whole garlic cloves stuck in the tofu brick ~ let sit for a few hrs in fridge. Cut into cubes (or whatever way you like it) and toss in a Wok with green onions, Broccoli, minced/fresh pressed garlic and 2 handfuls of peanuts. Add black pepper/dried chili's to your taste!! - Serve over rice or noodles! YUM - xo

My favorite vegian recipe is Pastelon de yuca or mashed yucca filled with mash sweet plantain and cabbage. Chayote filled with mashed sweet plantain. Nice puertorican stile recipe!! let me know if you want to know it.

Black Bean Burgers
1/2 onion diced
1/2 cup flour
1/2 tsp. seasoned salt
salt and pepper to taste
1 can black beans, drained
2 slices bread crumbled
1 tsp. onion powder
1 tsp. garlic
oil for frying
Saute onions til soft 3-5 minutes
in large bowl mash beans till almost smooth. Add onions and other ingredients except oil, adding flour only bits at a time to combine well. Mixture will be thick.
Form mix into patties, approximately 1/2 inch thick and fry in oil until slightly firm.

I'm not really much of a cook but I LOVE to bake!
I make anything from cookies, muffins, brownies, cakes, pies, icea cream, and much more! (of course, vegan!)
But of all, my favourite recipe is tiramisu!
The sweetness of the cream and bitterness of the cacao+coffee powder match perfectly, and it's soooooooo yummy!!!

I've got so many allergies that I've had to eat meat at times, but I try to get from the health food store, and I mostly eat fish and free range eggs. I'd love to be more of a vegetarian. I also have IBS so I have to be doubly careful. I'd love to win a recipe book like this.

I have been vegetarian for 5 years, and then I quot...after 10 years, I'm back!I took the Pledge for 30 days, and now I'm very happy to be "back on tracks"...The country where I live (Argentina) is famous for the meat, so it's quite difficult to find a lot of alternative products that I see on the recipes....but I believe that the number of veggies is increasing fast, and market will demand this product to meet their needs...Cheers!!

I grew up being criticised and teased ALOT because I didn't want to eat meat. At times my parents would force me to eat it so I never really learned how to cook vegan. I prefer veggies in as natural state as possible and I really am not good with tofu.
I have two simple, fun and delicious recipes to share- I do not use measurements because I use whatever I can get at my local fresh produce stand, and you can use as much or as little as you like!
VEGGIE FAJITAS:
jullienne veggies- yellow squash, zuchinni, red and green peppers, onion, and anything else that you like, simmer gently in a little bit of olive oil, add a little minced garlic and sprinkle a little chili powder. Veggies should still be slightly crisp- don't cook away all the goodness! Serve wrapped in a warm tortillia with simple salsa and dairy free sour cream! YUMMO!!!
SIMPLE SALSA:
Dice fresh tomatoes (Romas are great and usually less expensive), spring onions, jalapenios (as much or as little as you like!) a little lemon or lime juice, and a bunch of fresh cilantro, chopped somewhat finely.
The salsa is great served over tortillia chips with kidney beans, veggie shredded cheese and non dairy sour cream.

I absolutely love making Scrambled Tofu using Isa Moskowitz's recipe. I love the looks from my coworkers and children when they all comment how delicious it smells then curl their noses up when I tell them what it is! If it smells & looks delicious, then what's the problem I say right?

My favorite vegan recipe is anything I can assemble quickly, put in a crockpot and slow-cook for eight hours or so. After a long, hard day, I love to come home to the aroma of a savory, ready to eat vegan meal.
My favorite cookbook is one I inherited from my mother. It is not vegan but it is hilarious. The title is "The I Hate To Cook Book," and the author is Peg Bracken. I have both the edition that came out in the early 60's and the one that came out a few years ago. To paraphrase the author, this is the book you use when it's 5 p.m. and you are in the kitchen staring at the stove wondering what would be easy to put in front of your family for dinner.

I want this cookbook so badly! My go to book has always been Vegan Planet which is spilled on, torn and very well used. Her recipes are amazing always and this book would be sure to provide me with some great meals ahead. I love all vegan soups/stews/chilis I could live off them. My favorite recipe is my homemade bean and soyrizo chili. One of my old favorites from vegan planet is the farmhouse veg soup because you can use whatever you have on hand really. This book would give me so many great ideas!!

My favorite vegan recipe is a tofu patty with sun-dried tomatoes, carrots, breadcrumbs, and a whole lot of other stuff :) the sun-dried tomatoes give it so much flavor. I just pour a little tomato sauce over the top and it's perfect.

My favourite recipe is really simple.
You will need pasta (I prefer green pasta with spinach), fresh pepers and tomato sauce.
Chop pepers and fry them until they are soft, add tomato sauce and stirr for a while. Mix with cooked pasta.
If you want to you can also add tofu or anything you like.
Just finished my plate of it.

I love to make Spinach and Strawberry salad~ It's so yummy and easy to make !
INGREDIENTS (Nutrition)
2 bunches spinach, rinsed and torn into bite-size pieces
665 g sliced strawberries
120 ml vegetable oil
60 ml white wine vinegar
100 g white sugar
0.6 g paprika
20 g sesame seeds
8 g poppy seeds
DIRECTIONS:
- In a large bowl, toss together the spinach and strawberries.
-In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.
Seriously try it, it's delicious :]

My favorite vegan meal to make at home is Biscuits and Gravy with Smoky Collard Greens!
I tend to use the recipe for sausage gravy from Yellow Rose Recipes, sometimes using chopped up Field Roast Sausage, sometimes making my own tempeh sausage crumbles from Vegan with a Vengeance.
I love the biscuit recipe from Joy of Vegan Baking!

I love to make stuffed peppers :) especially when we are having a pasta dinner .. i will stuff big juicy red bell peppers with all the yummy colorful stuff like corn, black beans, carrot, garlic, rice, cilantro and always with lime juice.. yum the perfect partner for a rice noodle pasta with tofu and sundried tomatoes!

My fav is so easy - yellow curry w/ toful & broccoli. People don't realize how easy curry is to throw together (literally).
1 pack extra firm tofu
1 can coconut milk (you may be tempted to get light....but I don't suggest it lol).
From there I don't even measure. I just throw a ton of yellow curry powder until it's a nice, deep yellow. A dash of cumin, a dash of corainder and some ginger if I have it. Throw it together, simmer for about 1/2 hour - DONE! mmmmmmmm

Mmmm.. Vegan gravy.
2 tbsp margarine
1 onion, diced
2 tbsp flour
1 tsp garlic salt
2 tbsp cornstarch
1 1/2 cups vegetable broth
2 tbsp soy sauce
Preparation:
Heat the margarine over medium heat in a large skillet and sautee the onion for 2 minutes. Add the flour and garlic salt and sautee for 5 more minutes.
Add the vegetable broth and cornstarch, stirring to mix the cornstarch well. Bring to a boil, then reduce to a simmer, stirring frequently to make sure no clumps are formed.
Add the nutritional yeast and soy sauce and reduce heat. Cook for one more minute, stirring.

My favorite recipe is pea and potato curry (Isle of Wight Vegetarians and Vegans- 'Meals without Sqeals' (especially great for those of us with little culinary expertise and who like to experiment with 'whats in the cupboard'. Its also great cos its so adaptable to different tastes- can be as hot/spicy as you make it)

I have only stopped eating animal products a couple months ago, but my favorite so far is Creamy Vegan Corn Chowder.

Ingredients
2 cups diced Yukon Gold potatoes
4 cups vegetable broth
3 cups sweet corn
1/2 cup finely chopped sweet onion
1 bay leaf
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/4 tsp salt
3/4 tsp pepper
Directions
Combine all ingredients except salt and pepper in soup pot.
Bring to a boil and reduce heat.
Simmer for 20 minutes.
Remove bay leaf.
Blend half of the soup in a blender.
Return to pot and stir in salt and pepper.
Keep warm until ready to serve.

My favorite recipe are my mother's Vegan Shortbread cookies.
They only take flour, olive oil, sugar and some vanilla extract. Super easy to make, they're done in twenty minutes from the very start to the end.

My favorite recipe to make at home is nachos. I put down a layer of tortilla chips, a layer of refried beans, a layer of Morningstar crumbles(sometimes made with taco seasoning packets), a layer of hot sauce, and a thick layer of Follow Your Heart Mozzarella cheese. If my husband and I are reaaallyy hungry, I'll repeat all that and make a double batch. After I bake them, I top them off with a ton of tofutti sour cream. It's delicious and an great for company or just when I want to indulge on mass amounts of food. ;)

Mix together a can of mini-diced tomatoes and a can of hot chili beans. Warm 'em up on the stove, or nuke 'm. Spoon out the mixture over a plate of any small, whole wheat pasta, or brown rice. Heat a can of collard greens for a side dish. Fast, easy, and filling.

I went vegan not too long ago and have been slowly adapting my only-red-meat-please father to a more healthy lifestyle. For thanksgiving, we made vegan stuffing together :)
Ingredients:
* 14 slices bread, lightly toasted or pre-dried, chopped into cubes or crumbles
* 1 1/2 cups dried cranberries
* 2 1/2 cups apple juice
* 1 red onion, diced
* 2 stalks celery, diced
* 3 cloves garlic, minced
* 2 tbsp vegan margarine
* 1 tsp thyme
* 1/2 tsp sage
* 1 tbsp dried parsley (or 2 tbsp fresh, chopped)
* 1/4 tsp black pepper
* 1/2 tsp salt
* 1/4 tsp ginger
* 1/4 tsp cinnamon
Preparation:
Pre-heat over to 350 degrees.
In a small bowl, pour apple juice over cranberries and set aside.
In a large skillet, sautee the onion, celery and garlic in the vegan margarine until soft, 3-5 minutes. Add thyme, sage and parsley and sautee for one more minute.
In a large bowl, combine bread, onions and celery, and cranberries and apple juice, stirring to combine well.
Bake for 20-25 minutes. Add additional spices, if desired, and enjoy!

I think Lentil and Brown Rice Stuffed Green Peppers with a Marinara is excellent autumn fare. Add an old movie and I'll bring the wine.

A simple cucumber sammie! Sliced cucumbers with sea salt in a vegan pita covered with hummus inside...yummy!!!

Maybe a little basic, but my absolute favorite recipe is for miso soup, with lots of mushrooms and tofu in it. I seriously could eat miso soup every day.
I also love the chickpea-hijiki sandwiches from Vegan with a Vengeance. So yummy, sometimes I just skip the bread and eat it by the spoonful.

One of my favorite vegan recipes I got off the internet--Portabello Wellington. It's Portabello mushroom caps stuffed with leeks, various mushroom varieties, onions and garlic with a puff pastry shell on top. After eating this, Seitan Stroganoff fell to the #2 spot :)

My favorite easy dish to make at home are the Quesoless Quesadillas from The Vegan Table with a side of roasted veggie couscous. It's ridiculously easy to make and delicious!

You're making me pick just one? With all the raw vegan cupcakes I've been making lately (I love "rawifying" the ones from "Vegan Cupcakes take Over The World"), I'd have to select one of them at the moment. I love my Rawtess ones (similar to the Fauxtess, vegan Hostess ones). They are made from nut "flour," cocoa powder, dates, agave, coconut milk, etc. They are so good!
I'd love to get my hands on this book to start rawifying these recipes. I could post my results on my site or send them your way.

Took the pledge to not eat meat for one month, I am doing very well it has been almost 3 weeks with no meat and im loving it! Trying to talk my family and friends into trying it as well! I have decided that even eating/drinking dariy isnt the right choice for me anymore, But i have no idea what all i can make! my meals have been very simple items, I need more ideas!

I have a great love for asian cuisine, so I'd have to say my favorite recipe is tofu, snap peas, edamame,red pepper, onion, and water chestnuts sauteed in soy sauce and minced garlic served over white rice. Yum

I literally became a vegan YESTERDAY! I decided it was the best for me and the PETA pamphlet about becoming Vegan or Vegetarian where it describes the torture animals are put through just to make food - brought me to TEARS. Yesterday I made the banana muffins that i found on the website and they were great, it definitely is making this easier for me! I am so glad I made this change and I would LOVE to win this book!

i made vegan brownies with black beans once, and they were delicious! even my dad ate one (and enjoyed it) and he HATES beans!!

My favorite recipe to make at home is Vegan Pho. Pho, is a traditional dish from Vietnam and I used to absolutely love it. Since turning vegan, I've been testing different homemade broths that taste like how I remembered my mom's pho. I think I've finally, after all these years, found the perfect matches. Now I make this nearly every month from scratch! It's like being at home again, except, one that loves animals and would never consume their flesh!

I'm vegetarian for 5 years and since a few weeks a vegan. I'm not a great cookinggirl (yet) so I need this book :))
My recipe I love and my son too:
Banana Milkshake
2 or 3 bananas
Kiwi 2
Ahorn sirop a little bit if the bananas aren't sweet enough for you
Milk form nutes you like
Put it in a blender
Shake it
In the fridge for 30 min

There are so many good vegan recipes it is almost impossible to choose only one! One of my most favorite dishes is pea sprouts sauteed with vegetable oil with nutmeg ginger and spices of choice. Throw in some tofu for additional flavor!

too tough to decide on a favorite. right now, my favorite thing to do is bake vegan goodies with my kids, they love to bake with mom and it helps to show them they can have the "goodies" their friends have without harming animals.

I still turn to the Compassionate Cookbook on the rare occasions I do the cooking, but my favorite homemade-by-hubby vegan dinner is grilled veggies & bean burritos with veggie rice or roasted corn on the cob. My husband also makes an awesome seitan pot pie for holidays.

Hi! when I'm home for lunch I like to make a blender full of hummus soup- it started out as hummus, but as I got cheaper and lazier it became less about tahini and more about spices and tomato. Now it's a delicious, almost raw veggie soup. My favorite!

I'm transitioning to a vegan diet. Since I was two, it always felt wrong to me to eat animals so I never ate much of it, without completely ruling it out of my diet, until recently when it suddenly became clear that was not going to eat anymore meat, dairies or eggs, and so far, it feels so great! But as a mother of two I need to make meals that everyone in my family will enjoy and I feel that this book would help me achieving that goal.

I'm on a money and time budget, so my favorite vegan recipe follows: Frozen vegetables (any kind or multiple kinds), rice (any kind or multiple kinds) and a dollop of hummus (any kind or multiple kinds).
My fav:
1/4 cup Blackeyed Peas
1/4 cup Corn
1/4 cup of Long Grain Black Rice
Dollop of Trader Joe's Mediterranean Hummus
I love this recipe because it is so easy to make variations. I even love omitting the rice and putting the other ingredients on toasted bread, then slice diagonally and eat like a sandwich. Have a fork ready to eat the pieces that fall out of the sandwich.
I'd love to begin experimenting with recipes from this cookbook! I'm finally ready to make the leap to the Vegan Cookbook!

I have now been a Vegan for 2 months and totally love it. My whole attitude to food has changed, and the delicious variety of menus we have been enjoying is fantastic. My favourite meal is curried rice and vegies followed by fruit salad.
I'd really love some new recipes to try.

I generally make spontaneous meals out of whatever's in the kitchen, but occasionally I use a recipe. I think the recipe out of my vegan recipe box that has the most wear is Pad Thai. Or my husband's "Perfect Vegan Pancakes".
