I am a hideous cook, and although I graduated from college in 2002, I still haven't progressed much from how I used to "cook" (and I use the term loosely) then.
What I survived on then is what I survive on now: baked potaoes and/or Ramen. True, the potatoes now come from a CSA and the Ramen has branched off into the entire instant noodle area at Whole Foods and Trader Joe's, but the sould still remains the same. They're cheap, they're quick, they're yummy and even I can make them without setting the apartment on fire. Hooray!

My favorite recipe is waffles with margarine and tofu chicken drumsticks. I know it's not really that creative or anything but I really, really like waffles.

I have to say my favorite "easy snack" would have to be edamame. its so good! all you do is boil water and put some salt on top and your set!
I love the idea of an easy vegan cookbook by the way, sounds delicious.

Honestly, my favorite vegan dorm room food is a peanut butter and jelly sandwich. It's quick, easy, and you can take it to go.
As for something more fulfilling - I tend to be a fan of avocado tacos. All you need to do is heat up the tortillas in a microwave. Mix some avocado with lemon and toss it together. Of course, you can add whatever veggies or sauces you have on hand.

One of my faves is a faux chicken wrap. Whole wheat tortillas with a microwaved morningstar chick patty cut up into strips or pieces, with veggies and hummus spread all wrapped up. Healthy and delicious!

My ex-boyfriend and I used to make these DISTURBINGLY carb-crazy potato pasta when we were in grad school and he was living in an apartment with no kitchen. It was essentially angel hair pasta, diced and seasoned potatoes, onions, and soy sauce, all cooked up on his hot plates. It was SOOO salty that I'd get a headache almost every time I ate it. But we loved it.

Definitely nachos. I take some good corn tortilla chips, a can of black beans, a jar of salsa, and an avocado and heat in the microwave. Sometimes I sprinkle lime juice over the beans. If I have access to it, I might put some good soy cheese and soy sour cream on top, but usually the avocado is enough to add creaminess.

When I lived in my sorority house and was kitchenless, other than a microwave, I used to snack on raw green beans, baked potatoes, and a lot of popcorn.
Now, my favorite "kitchenless" snack is homemade guacamole, salsa, and corn chips.

Taste of Thai box noodles saved my life. I would cube in some tofu from the school convenience store and some veggies from the salad bar if I was feeling really culinarily inclined.

I lived on Subway sandwiches and instant noodles in a cup when I was in college. Grilled cheese is a good standby, but when I discovered falafel, it was all over... Definitely my fave. :P

Easy, no-cook black bean salad; great in wraps, too! 1 can black beans, rinsed and drained, 1 cup frozen (or canned) corn, 1 tablespoon olive or canola oil, 1 tablespoon balsamic vinaigrette, chopped green onions, and chopped cilantro. You can make lots of variations but it is a great protein source and lasts for days getting more yummy marinating in the fridge.

i would have to say making a pb&j is the easiest thing, but I mostly would make a bowl of whole wheat pasta with some steamed veggies from a bag... Sometimes I would even throw in some faux chicken for some protein. I am in my second year of college and love being a vegetarian but sometimes its SO hard to find decent food on campus... This book is such an awesome idea!

I always liked to just throw down a piece of whole wheat toast and smother it with vegetarian baked beans, paired with a whole avacodo. I still like to do that, but then 8 years later I'm STILL in college. :(

My favorite meal in college was veggie chili.
I used one can of Kidney beans, 1 can of Mexican Style stewed tomatoes, a white onion, a chopped up Serrano chili pepper, and simmered it with Chili Powder, Onion powder, and Garlic Salt. I would either simmer it for twenty-five minutes for a fast meal or let it cook in the crock pot all day and dream of warm chili all day until I got home. Then top it with Soy cheddar and tofu sour cream, chopped scallions, and black olives. Serve with tortilla chips or Fritos.

My favorite is TVP mixed with spaghetti sauce and sauteed veggies on top of spaghetti squash. You get the delish of the sauce and the veggies without all the extra weight of actual spaghetti!

My dorm has a kitchen, so my favourite has to be quick stirfries - chickpeas, frozen vegetables, some olive oil and salt over rice, yum.
Otherwise it's got to be sandwiches with lots of mustard, spinach, sprouts, cucumber, and onion!

My favorite microwave meal is chocolate cake in the microwave! It is basically WW flour, one banana mashed up, vanilla extract, cocoa powder, and chocolate chips! You can also be creative by using almonds, coconut flakes etc. Thanks for the opportunity!

Back in the day at Kent State I was the queen of "fluffernutters"! My dorm mates could not get enough! I had my own spin on this classic treat! I'd spread smooth peanut butter on a piece of plain pita bread, then add a generous layer of marshmallow fluff, and then a layer of freshly sliced bananas. I'd top it all off with cinnamon sugar and then place it in the toaster oven until the fluff and cinnamon sugar got browned and crispy...delish!! Ah, those were the days!!

One thing I would love to eat when I got home from Uni for lunch was freshly cooked pasta drowned in olive oil with some salt and pepper, if I was feeling a bit more adventurous I would also put in some fresh crushed garlic &/or chilli flakes. I still eat this 15 years later for a quick lunch/snack. As they say the simple things in life are often the best!

As a college student who's short on money but splurges on nutritional foods, I have come up with a wonderful daily treat that allows me to get in all 9 servings of fruits and veggies daily, without an oven at all! Plus, its vegan!
Super Sensational Smoothie
1 cup Almond Breeze unsweetened almond milk
1 cup strawberries, fresh or frozen
1 cup frozen or fresh blueberries
1 banana broken in pieces
1 apple, chopped in quarters
1 cup broccoli, raw
1 cup raw spinach
2 tbsp. 100% unsweetened cocoa powder
2 tbsp. peanut butter or almond butter or sunflower butter
1/2 cup frozen sweet peas
1/2 cup carrots
1 plum
4 tbsp. ground flaxseed
2 tbsp. chia seeds
1 tbsp. cinnamon
1 tsp. nutmeg
1 tbsp. fresh or ground ginger
Blend all in a blender. Add each item one by one until blender is full. Everything will not fit at one time, so I add one by one until the blender is full and then divide the mix between 4 different glasses ( they won't be full yet). Add the remaining ingredients to the blender and add 1 additional cup of almond milk to blend well. Divide the rest between the remaining space in the 4 glasses.
I drink this 4 times a day and in case the rest of my day is crazy and I can't eat a complete meal, I at least know I have had a daily dose of my vitamins and minerals by drinking this drink. Plus, its a great protein supply!

Because I am limited with time and a microwave at work I have made a delicious wrap with vegan chicken strips (in a bowl with garlic, herbs, and olive oil), with lettuce and vegan cheese. Not very original. Which is why I could really use this book. Due to faulty gas lines I don't have a stove or an oven in my house either. I could gain alot of useful recipies from this book.

I know how horrible college eating options can be, believe me!!! I definitely have tried to eat healthy but it's hard when you don't have a lot of money in your pocket. this book would be GREATLY appreciated and would be put to good use. My favorite dorm food is rice with soy beans (steamed edamame popped out of the shells) with some Japanese nori seasoning. I owe it all to my Japanese roommate Kira who clued me into the wonders of rice! We love our rice cooker and we use it well.
Of course, currently my favorite dorm snack is Dandies vegan marshmallows with Rice Milk Almond Chocolate. You can't go wrong!

My favorite college-friendly recipe is one I learned from a college classmate.
Slice up some extra firm tofu into rectangles of your size preference (I like mine long enough to dip, but wide enough to put on a sandwhich, and thick enough to hold themselves together.) Then just crush up some old (or fresh) crackers, add some salt and any herbs or spices (Spike seasoning was a friend of mine in college.) Now heat a thin layer of oil in a pan or fire up your grill, cover the tofu in the crumb mixture on every side, and cook it on the pan or grill until you see some golden-to-dark brown on the breading. Then flip each piece and cook that side the same way. Dip it in your favorite teriyaki, peanut, mustard, or hot sauce and enjoy! My boyfriend and I even used this camping once and it was amazing. Its great for using up stale crackers.

I love soy buffalo wings! I love the hint of spice. They are great for everyone, even my non-vegetarian friends love them. I'd love the book because I want to switch from a regular vegetarian to a vegan and a cookbook like that would help a lot.

Great idea for a cookbook! I joke on occasion that I became a vegan out of laziness during college. Meat took too long to cook in a dorm's community kitchen. My fave go-to meal is steamed frozen veggies over tofu spritzed with Braggs and sprinkled with nutritional yeast. Forget marinating or baking the tofu, same flavors in 1/2 the time :)

I am a real estate broker and very busy. This is my favorite hurry up Microwave recipe for Spanish Rice. Unfortunately, I never measure unless I am baking.
In a deep dish or bowl(I use Corning Ware) put approx. 1Tbsp Canola Oil, about 1/4 cup of chopped onions and peppers(I use red & green).Optional some ground vegi-burger) and about 11/2 cups rice(instant). 1 Tsp. veggie flavoring or Braggs and mix cover with V-8 Juice. Microwave for about 10 min and stir. Microwave for about another 10+- min until rice is done. Serve with a salad.

When I lived in the dorms we had a kitchen on every floor and all the girls would congregate there after class. It is one of my favorite memories of my undergrad days!
The following became a staple as we all slowly became vegetarian/vegan.
1 can of black beans rinsed
1 can of corn rinsed
1 cup of whatever salsa is on sale for really cheep this week.
put in a pan or microwave safe dish and heat.
Wrap in a whole wheat tortilla or eat like soup.
If you are feeling sassy or got paid this week, garnish with cilantro and/or vegan sour cream

My favorite meal is pretty simple. It's a fake "chicken" burger with lettuce. Obviously it's better cooked with a george foreman or a grill. But it's fantastic. I'm a very picky eater so it makes things very challenging for me. I tend to make basic foods and with university I don't have much time to cook anything big. Plus I'm only ever cooking for myself. It's hard to find things meant for just one person.

this cookbook looks awesome. i'm in school and actually moving from an apartment back into a dorm next year, and have gotten so used to having a stove i'm going to lose my mind! this would be a great resource for me.

my favorite quick and easy fix is my spin on the college staple ramen with my busy schedule its a god send, boil the noodles add soy sauce and presto you've got a 5 minute meal. as vegan as it gets, add some veggies and your set. quater of the sodium but just as delicios. another love i have currently is the pancake in a mug from this book. man, i need to cut back on the carbs.:P there a amazing when you've got but 3 min. to spare.

This is embarrassing because it showcases how truly lazy I am, but it is sooooooo delicious, that I eat it as often as I can. I get Amy's Black Bean Enchilada and nuke it, then I put a huge scoop of Wholely Guacamole on top, and then two scoops of Chi-Chi's salsa on either side, and then eat it by scooping it up with tortilla chips. Not figure-friendly, but really tasty!

I make a mean "BaseCamp Vegie Sandwich". Which inclueds whole grain bread, vegan cream cheese, alfalfa sprouts, raw sunflower seeds, cucumber, red bell pepper. Spread cream cheese on bread, press sunflower seeds into cream cheese, add all of the other ingredients and that is a tasty sandwich !!! I have even had "meat eaters" love this one.

Quick, easy and awesome:
- Cook some brown rice in your microwave by following the directions on the package.
- Heat one can of diced tomatoes
- Heat one can of black beans
- Mix the black beans and tomatoes together
- Top the rice with the mixture, add some pepper (oregano and basil work as great seasoning too) and you are good to go!

We call this one "Leftover Tacos." It's made from, well, leftovers!
It's easy! Just take a tortilla, and put left-over goodies from your fridge on it! For example:
-Tomato/spaghetti sauce
-Lettuce (Romaine is so good!)
-Rice or beans
-salsa
-Sprouts or peas
-Cut-up boca nuggets/burgers
-Onion/garlic powder for more flavor
-Italian dressing
-Anything else you can find!
This quick little meal is perfect for quick breakfasts too! :D

Although I love to cook, and I am newly vegetarian (mostly vegan) , I have an addiction to veggie burgers (Boca makes Vegan Veggie Burgers), on whole wheat buns, with imitation mayo, with lettuce, tomatoes, onions, black olives, and avocado on it topped with sea salt and freshly ground peppercorns. Add a side of Soy Crisps (I recommend the sea salt version) and its absolutely delicious. If you want a cheesy taste, try Veggie Slices, but these are not vegan, these unfortunately have casein, which contains milk protein.

Between a late night theatre practice, an unifinished art project and a 10 pages dissertation a day late, I always believed collegians needed very fast, healthy and cool meal ideas. I think your book is just the right thing! My super-recipe (well not that super, just say that it correspond to all the caracteristics above): a quick couscous! I use aromate-added couscous (lemon and fresh herbs or tomato, etc)add frozen vegetables and chickpeas, and here we go for another sleepless night working! I get pretty used to this, starting soon my master degree...

hands down the best meal for me ,is vegan hot dogs and grilling them on the stoves and having homemade sweet potato fries or squash fries from the toaster oven. i love vegan food,i could never go back to eating nasty meat.just the look and smell of it makes me want to throw up( no lie) lol :)

My all time favorite, easy, fast, vegan treat has to be a brownie that can be cooked in the microwave in 4 minutes. The recipe is so simple, and the ingridients are super easy to find

One of my favorite foods, hands down, is hummus. It's so good and it's versatile; you can use all the ingredients "to taste" -- chickpeas, garlic, tahini, and lemon juice. I like to start with two cans of chickpeas and two heaping tablespoons of tahini. Personally, I like to add more minced garlic than is socially acceptable (about 6 cloves), but some people just like to use one or two. Finally, I add the juice of a lemon or two and sea salt. You can whiz everything in a blender for a creamy hummus, but if you don't have a blender, a potato masher works quite well, too. A dollop of good olive oil rounds out the flavor. As my son and I have celiac disease, we forgo the pita bread in my family, but tortilla chips, cucumber and carrot slices, and celery sticks are perfect for dipping the hummus.

my favourite easy recipe is to cube some extra firm tofu, stick it in the microwave for 2 minutes and then pour over a mix of some soy sauce, curry powder and minced garlic. Mix tofu with marinade to make sure its totally covered and then microwave for another 2 minutes. Divine!

I'm a college vegan stuck on a cafeteria meal plan which supposes that plain, uncooked tofu from the salad bar is supposed to satisfy me every single day. Through experimentation I've learned to spice it up by microwaving the tofu with peanut butter and soy sauce, mashing it all up with a fork and spreading it on top of toast, then topping it with cucumbers, carrots, and other veggies.
Though I'm proud of my cafeteria creativity, I certainly wouldn't mind a copy of this cookbook for extra ideas... :D

Spiced Potato bits with Onions.
Sliced Onions - 1 ounce
Diced Golden Potato - 1 small
Minced Garlic - 1 clove
Minced Ginger - 1/4 inch piece
Fresh Thyme - 1 sprig
Chilly powder - 1 tsp
Vegitable Oil - 2 tsp
Salt to taste
Add oil & Onions to a Bowl and sweat them in a Microwave for 2 mins
Add garlic, Ginger and Microwave for another minute
Boil the potatoes in a bowl with little water for about 6 mins in a seperate bowl
Add potatoes to the Onions with thyme salt and more oil if needed
Microwave for another 3 mins
You can roll them up in a Indian Naan, Peta bread, Wheat tortilla or a Toast and its yum!!

I lived on dorm room junk food in college...but what's even more sad is that I lived at home!(Of course, this was all before I was Vegan) I ate Pop Tarts, Cup O' Noodles, Peanut Butter and jelly Sandwiches, Salads and Lunchables! Wouldn't that be awesome if someone would make a pre-packaged Vegan Lunchables complete with ham, cheese crackers and dessert!?

can of beans: kidney and black are my favs. rinse beans in colonder. add can of diced tomatoes (try different flavors: italian, jalapeno, etc,) rinse frozen vegis in collander with really hot water to thaw. throw it all in a pan (a microwave would work but I dont own one) then wrap it in a tortilla. quick and delicious!

Oh man, I'd LOVE this book! I'm a vegetarian, and let's just say my college is NOT vegetarian or vegan friendly! Most nights I resort to warming up a boca with tons of steamed veggies for dinner!
My favorite snack is one i invented, and it happens to be a GREAT pick-me-up after a nice sweaty workout! I dice an orange and top it with greek yogurt (or drained plain yogurt), top that with just a bit of banana jam, and sprinkle on some kashi go lean crunch! Sooooo good and refreshing!

One of my favorite standby lunches is the FBLTC. Fake bacon lettuce tomato and cheese. I make it a wrap by using a tortilla. I cook the MorningStar bacon in the microwave and melt my Vegan cheese on a tortilla in the microwave. Then I cut up some tomato and lettuce, wrap it all up and scarf it down. I will be heading off to college next year and this would be an amazing gift. Quick, easy, and cheap food is perfect!

I've been in college for two years now and a vegetarian for over 12 years... I barely ever have time to cook because I'm so busy with school, but my favorite thing to make is "moros", a Hispanic dish which is fairly easy to make with rice and a can of black beans. You mix it all together, add seasoning, and put it all in the rice cooker and vou la... your own Cuban vegetarian friendly dish!

Tortilla soup-- Tomato sauce, diced tomatoes, corn, beans, a bit of corn meal for thickening, and all the spices you can handle! Crumble tortilla chips on top!!
If you make it thick enough, you can use it as a hot dip for the chips instead of an actual soup.

Definitely nachos. I take some good corn tortilla chips, a can of black beans, a jar of salsa, and an avocado and heat in the microwave. Sometimes I sprinkle lime juice over the beans. If I have access to it, I might put some good soy cheese and soy sour cream on top, but usually the avocado is enough to add creaminess.

Well i decided to become a vegaterian about 2-3 weeks ago & have been stuggling to find some tasty recipes that contain local ingredients that i can buy from my farmer's market.
I have created my very own tofu snack patties that have cranberries, sunflower & flax seeds, sliced almonds & diced apples and tofu. They are great b/c i can eat them when im on the go to & from work. I usually make a big batch so i can freeze them, pop them in the toaster & go.
The best part is that everything is organic-since making the change to vegitarianism i have been feeling healther!

I've just recently (as in today!) decided that my family needs to cut back our meat/animal product intake drastically. With a meat loving husband and a dairy loving daughter this will be easier said than done! I'm hoping to ease them into it slowly.
When I was in college I used to eat a lot of oatmeal and I loved it! It was quick to make, and you could microwave it in the same bowl you were going to eat it in. This was a staple for study sessions and late night essay writing.

Both of my children are strict vegetarians due to personal choices and are avid PETA supporters. steam some veggies in a zip'n steam bag in the microwave (or on the stove if you have one). best veggies for this dish are brocolli, cauliflower and green beans
Add your favorite tomato sauce from a jar-mine has lots of garlic and olive oil
stir it all together, and top with a dash of hot sauce, and your preference of vegan cheeze (I like fake parmesan). It can also be yummy to add some crumbled vegan croutons for a little extra crunch!

Hey! I can say I probably not the best to ask for a recipe but I love me vegge meals. Where I am now the normally serve rice and alot of meaty foods so I dont really eat much though, I dont look the part. Every night I just end up grabbing some noodles or some rice and putting yeast flakes on them for the vitamins and the nutrition I need.

I just recently decided to go vegan, I've been vegetarian for 3 years. I'm in the phase between high school and college, and my living situation means that I don't get to cook very much. I love to cook, and would love to learn more vegan cooking techniques. My favorite simple vegan dish, and the staple of my current diet, is the classic pb&j sandwich (also great on a whole wheat tortilla rolled up!)

Vegan "Grilled" Cheese
Take 2 slices of bread and spread a thin layer of vegan margarine on both sides. Then sandwich slices of soy cheese between the slices and wrap the entire sandwich in tin foil. Heat up an iron, and let the iron sit on the sandwich for 1 minute, then flip over and do the same to the other side. Unwrap and enjoy!

Ok, well I'm in my first year of college and as the only vegetarian in my house i tend to find it a struggle to eat healthy, I feel this book would be beneficial to my lazy eating habits!
Save a student!
The easiest recipe for the tastiest pasta;
1. Find vegetables in fridge (or at shops), could be anything depending on what you like, i choose peppers garlic and caugettes.
AT THIS POINT PUT A PAN OF WATER ON TO BOIL
2. Slice up vegetables into small(ish) pieces and marinate in whatever oil (sunflower/ olive etc) you have and add a nice spice ( or two), I chose paprika, with maybe a little cajun sometimes. Add salt if desired.
3. Put in the oven say gas mark 6 and leave vegetables in until slightly soft (im not sure the times exactly, I have a temperamental oven).
4. Add whole-wheat pasta into boiling water from earlier and cook as according to instructions on packet.
5. While waiting for it all to finish, grate some cheese.
6. Serve up, sprinkle cheese and enjoy!

My personal favorite is to microwave a package of vegan cream cheese in a bowl and microwave it for 2-3 minutes, stirring after each minute. Then I add fresh salsa or pico de gallo to the melted cream cheese, usually about 8 oz does the trick for 8 oz of vegan cream cheese (50/50). To serve I scoop it up and into my pie hole with tortilla chips. YUM!

Brownies...
I know what your thinking, that brownies arnt really food, but seriously when else can you get away with chowing down on brownies than in college?
Besides everyone else helps eat them, not a luxury I have now at home!
All you need for vegan brownies is:
Flour
Water
Earth Balance
Cocoa powder
Sugar
Vanilla
Baking powder
Salt
*and if your not vegan, add marshmallows just on top, SO GOOD*

I live at home but coming home from late classes with my 2-hour commute doesn't leave me with much energy to go all out and make myself a gourmet meal. A quick thing I love to do is make carrot and cucumber with some artichoke dip. It takes like no time when you use baby carrots and store-bought artichoke dip.

Macaroni and four cheeses
By the authors of 'Skinny Bitch in the Kitch'
Serves 8
INGREDIENTS
• 1 tablespoon refined coconut oil, melted, or safflower oil, plus more for the casserole dish
• About 2 tablespoons fine sea salt
• 1 pound whole-wheat or brown rice elbow macaroni
• 2 (10-ounce) packages frozen pureed winter squash
• 2 cups soy or rice milk
• 4 ounces vegan Cheddar cheese, shredded
• 2 ounces vegan Jack cheese, shredded
• 4 ounces (about 1/2 cup) vegan cream cheese
• 1 1/2 teaspoons powdered mustard
• 1/8 teaspoon cayenne pepper
• 1/4 cup whole-wheat bread crumbs
• 2 tablespoons vegan Parmesan cheese
DIRECTIONS
Preheat oven to 375 F. Oil a 2-quart casserole dish; set aside.
In a 4- to 6-quart stockpot over high heat, combine 3 quarts of water with about 1 1/2 tablespoons of the salt. Bring the water to a boil, add the macaroni, and cook according to the package directions.
Meanwhile, in a 3- to 4-quart saucepan over medium heat, combine the squash and milk, stirring and breaking up the squash with a spoon until the squash is defrosted. Increase the heat to medium-high and bring to a simmer, stirring occasionally. Remove from the heat and whisk in the Cheddar, Jack, cream cheese, mustard, cayenne, and the remaining 1/2 tablespoon of salt.
When the pasta is done, drain it, then return the pasta to the pot. Stir the cheese sauce into the macaroni. Transfer the entire mixture to the prepared baking pan.
In a medium bowl, combine the bread crumbs, Parmesan, and the 1 tablespoon of oil. Sprinkle over the top of the macaroni and cheese. Place the casserole dish on a baking sheet and bake for 20 minutes, then broil for 2 to 3 minutes, or until the top is nicely browned.

My fav to make in the dorms required the kitchen stove: Marinade diced tofu in soy sauce. Saute thinly sliced red cabbage (dirt cheap) in olive oil, garlic & ginger (can be ground or fresh). Once cabbage is tender, add tofu & remains of soy sauce marinade. Heat through. Very yummy & filling.

Boca Original Vegan veggie burgers with Morning Star Farms veggie bacon*. So practicaly, It's a bacon cheese burger. (: I am not vegan, but vegan food is still yummy.
*The bacon has egg white and milk in it, so, it is not vegan.
As a vegetarian, this food is SUPER quick, easy, and cheap. (: Yum. It is also good with lettuce, ketchup, pickles, and tomato.

Here's a really quick easy recipe for a Salsa Cheese Wrap.
-Flour Tortilla wrap
-slice of cheese or cheese substitute
-spoonful of salsa
Lay the cheese slice on the tortilla, spread a spoonful of salsa on it, pop in the microwave for about 20-30 seconds (depending on power of your microwave). Then you have a Salsa Cheese Wrap! Quick and yummy!

Coffee Monkey
1 cup of Vanilla Almond Milk
1 medium frozen banana
1 tablespoon of organic instant coffee
1 handful of ice cubes
Throw all ingredients into a blender and blend until smooth. Pour into a glass and enjoy!

I am a student who is also a mother. When i'm not in school i'm taking care of my son, needless to say between changing diapers,cleaning, attending classes, and studying i don't have much time to cook. i want to teach my son good healthy eating habits and i don't want animal products to fester in my apartment just because i have little time.
the simplest thing i can do in a short time and tight budget is a nice leafy salad, chalk full of tomatoes, broccoli, cauliflower, carrots, green leaf lettuce, and chopped up veggie protein weenies, topped off with either balsamic vinegar, or soy ranch dressing

Risotto stuffed peppers!! Just get some of that instant rice (vegan though!), make it in the microwave, and stuff a fresh red pepper with it, adding in chopping mushrooms and spices. It's getting me through law school- I definitely use my oven as storage space.

My favorite college food is:
Mushroom Quesadillas. I take a whole wheat flour tortilla, spread a thin layer of salsa on it, add a few crushed mushrooms, and finish with a handful of soy cheese. Then i microwave it for 30 seconds..and it's delicious!!!

Well at a college I got about a 5 minute prep meal. Warm up some pasta noodles to al-dents in a microwave. The night before marinate(basically anything I made mine from tomato paste, chili power, garlic, Ginger, and some maple syrup) from froZen tofu(cut into pieces as big as you desire). Then mix it all together with pasta sauce and heat up once more.

For a quick snack I like to eat something with protien for energy now and a few carbs to burn as I go. I usually open a can of cannaloni beans but any type of beans will do. I pour off the water and smash the beans with a fork. Then I add a squirt of lemon or lime juice, some basil or oregano, a pinch of salt. It really depends on what I'm craving, a little cumin if I'm twisting it in a mexican direction, a little red pepper if I'm leaning toward a Thai spice or curry if I'm craving a taste of Middle Eastern food. After I mix it up I spread it on a piece of bread, toast if I can, a vegan bagel or whole wheat crackers. It doesn't matter. It's quick and filling and good for you and can be done with a million different combinations. I often have a container of some bean spread and some crackers in my bag. Great on the go.

Vegan Ranch Dressing and Pita Chips!
1/2 cup soy milk
1/2 cup soy veganaise
1 teaspoon onion powder
1 teaspoon garlic powder
2 tablespoons red wine vinegar
1 tablespoon parsley
a pinch of salt
whip all the ingredients together! while your pita pieces toast in the oven and in less than 15minutes DELICIOUS

well, in my family, we barely go to the grocery store. hence, we really never have much food to prepare actual, well known meals. i just grab anything that looks good and put it together, and create something brand new. the other day, for example, i had veggies, salad dressing, and flat bread. i layed out the flat bread, cut all the veggies up (green peppers, red peppers, spinach leaves, etc.) and put it all down, mixed in together on the bread. i then spritzed the balsamic vinegrette dressing on the veggies, and rolled it all up. now, im sure many people have tried this, or have eaten this before, but i just think its fun making something up with what you have and going with the flow.

I haven't gone to college but with my hectic schedule, I might as well be.When I'm hungry and don't have tons of time I make my Spicy Oniony Ramen Noodles(as you can see I haven't made a name for it).Ingredients: Beef Ramen Noodles (Oriental tastes great too), 1 small onion, Tofu Beef Crumbles, Sazon, Cayenne Pepper, Canola Oil
1.Heat canola oil in skillet (low heat so that onions can sautee)
2.Add onions to skillet (cut onions anyway you want+amount depends on your liking)
3.When onions are beginning to soften, add a dash of sazon and cayenne pepper (again make this to YOUR taste)
4.Add beef crumbles to seasoned onions until heated
5. Cook your Ramen Noodles in separate pot or microwave them.
6. When the Ramen is done you can add the season to them, then add them to beef mix or add the plain noodles to beef mix then stir in season package.
7. OH! drain the water from the noodles...only leave a tiny bit so that noodles won't stick to pan when mixing with beef mix.
8. ENJOY!...and sorry I'm not the best recipe writer but the dish is really good!

I eat a lot of mixed up banana, peanut butter, and crushed tortilla chips. It's salty and sweet, so I tend to eat it at all hours.
I also like to make a dip/dressing for veggies with olive oil, mustard, salsa, pepper, and garlic powder. I swear it tastes good.

Here in Colombia (South America) there aren't a lot of options to go out and eat veg (big carnivores) So tend to invite people over in order to avoid ending up eating a big pile of lettuce with tomatoes (the only version of salads in most restaurants). I really enjoy doing the very easy pasta with spinach and blue cheese...YUM!

All you need is Oragnic whole wheat tortillas, blackbeans , brown rice spiced with mexican seasonings , avacodo , tomato or anything else you would like to add.

Wraps are easy and versatile. I'll put veggies in a little crockpot with some veg broth and seasonings and I have a delicious portion of vegetables in broth, much like beef stew veggies but better be cause it is without the nasty beef!

This sandwich is super comfort food medley on a big wheat bun. It’s very tasty and the recipe is incredibly simple. All you need to do is stack a veggie chicken patty on top of a large whole wheat bun with loads of mashed potatoes and vegan mac and cheese. (The spiral kind is the best)

nothing is as easy as taking vegan hot dogs and topping them with vegan chili(Litelife)and tofutti better than cream cheese.so delicious and only takes like 5mins in the microwave!

I make and eat my breakfast in less than ten minutes.
Almond Milk and Cinnamon Oatmeal:
Ingredients:
Vanilla Almond Milk
Oatmeal Oats
Powdered Cinnamon
1. Pour 1 cup of Vanilla Almond Milk in a bowl
2) Add three Tablespoons of Oatmeal Oats
3. Sprinkle as much powdered cinnamon as you like
4) Heat for 2-3 minutes in a microwave
You'll end up with a delightfully sweet bowl of warm oatmeal :)

well first off I'm really good at vegan baking but for some reason I am terrible at cooking =/
I make a large pot of pasta and partition it out into single serving containers.
Then I make jars of tomato, pesto, peanut, and lemon butter sauces.
Cube a block of tofu and bake it.
It gives me the chance to mix and match depending on what I'm in the mode for. Another advantage is that if I have a full day of classes and work I can bring the meal with me.

This is only a recipe in the barest sense, but the easiest, yummiest snack to find on any campus is an apple and peanut butter. And gosh darn it, it's delicious. Just grab a knife or a spoon and glob some peanut butter on to the apple before each bite. If you're REALLY lazy...I mean busy... you can dedicate the spoon so you only have to wash it once and a while, or eat it in the cafeteria so they have to wash for you, lol :).

My oldest and youngest daughters are Vegans, They have taught me a lot about foods as well as why they have chosen this lifestyle. I would like to have the Vegan College Cookbook to share with my oldest who is already in College and for my youngest to have when she goes to College.

My new favorite quick-food (and something I'm definately going to eat in college when I go next september)is a wrap made with bean sprouts, green onions, cucumber and tomato with cream cheese and ceaser dressing (both vegan of course) and burghul mixed with greek dressing(mix it before putting it in the wrap), with spices (I use oregano, cyan and a mixed veggie spice).
All this is put in the wrap (spinach wraps are the best if you can find them)

I live in a family of six.They all are major rednecks(not that theres anything worng with that)and loveeeeeeeeee meat.My mother never has time to cook two seperate meals and since i make romin noodle explode i end up eating toast and fruit a lot of the time.This cook book seems like a pretty good idea to me.

My fave dorm-friendly veg recipe? Mostly I stick to a bagel with tofutti better than cream cheese, or fresh fruit, or cocoa krispies with banana slices and vanilla silk. Oh, and fake turkey, fake cheese, and veggie mayo on bread. That's about all I can really make...
oh geez, how am I going to live off this stuff for 2-3 more years?! lol
I want this book so bad...and I'll order it even if I don't win, but I'd have to wait til late June! I'd love to hear on June 2nd that I won, especially since June 3rd is my bday!
Phew, just made it with about 40 minutes left of May 26th to spare!

Microwaves didn't exist back when I was in college, but I lived at home. ;-) I never really learned how to cook, so my microwave is my most important appliance. Still, when in doubt, the old two slices of bread + whatever in the middle stays a standby for me.

I'm an awful cook! I have only a few things I can make good.
Any easy recipes would make my life better.
My fave is just a big veggie stirfry. Onions/green peppers/red peppers/yellow peppers (any peppers)/jalapenos, with some mock chicken thrown in. Delicious!

tofu fried rice (as opposed to egg fried rice). its easy to make- cook the rice. Fry onions and garlic in a frying pan, add tofu, peas & the cooked rice.

My fav processed thing to cook in the microwave is a kind of quiche. It has fake bacon in it and is mixed with scrambled tofu, herbs, vegan melt cheese, potatoe slices, and onion. Mix it all together and microwave for 6mins!!!
From scratch, I enjoy heating apple slices and making a caramel dip from heating just sugar and caramel flavor together. Yummy!!
