
It's no secret that I'm a Southerner who loves to indulge in soul food. It's often thought of as fried, fatty deliciousness that's nowhere near being good for you. Most of the time this is true, but it doesn't have to be, and Chef Bryant Terry is here to help you enjoy the healthier side of soul food.
Last month, Terry released Vegan Soul Kitchen: Fresh, Healthy, and Creative African-American Cuisine, which features 150 recipes inspired by African-American and Southern cooking (aka "soul food"). Unlike many stereotypical soul-food dishes, the recipes in Vegan Soul Kitchen call for healthy ingredients and use healthy cooking techniques, and they're still loaded with flavor.

I like to cook blackeyed peas and add diced tomatoes and tomato juice. it makes a great side dish for any meal, you can eat it cold or hot!

Best soul food dish? Well this might sound boring but I'd just say it's cornbread. There is nothing delicious than fresh, hot, buttery cornbread... especially when it's all vegan... can't get enough!

I love mashed sweet potatoes with pecans. Also, I love organic collard greens with soul seasoning, MINUS MEAT, of course, black-eyed peas/black beans and rice, and vegan version of southern biscuits. This cookbook would be a greatly interesting asset to my collection. :-)
Vegan version of soul food is quintessential to my lifestyle because it is all about eating healthy!!!

My favorite soul recipe is my vegan chilli. I use soy crumblers, 3 different types of beans (white, kidney, red) and all types of peppers (green, red, jalapeno) mixed in with a couple of my secret spices depending on how hot I want it. That with some brown rice, yummy!

I make fantastic vegan biscuits that my husband and I enjoy with vegan gravy (we like the white bean gravy recipe from Vegan with a Vengeance). I'm also very partial to greens of any kind with a little liquid smoke or veggie bacon for the traditional smokey taste.

I'm trying to introduce my husband to veganism and created a dish that he actually asks for now. I pan fry tofu with okra, tomatoes, mushrooms and season it up with whatever spices that fit my mood. Then I serve it over a hot skillet of cornbread fresh from the oven.

"BBQ" bean dip with vegan burger crumbles and corn. Just use whatever spices/herbs you've got around, a little brown sugar, some ketchup (yes,really), a touch of spicy mustard and hot sauce. Put the beans, corn and flavorings in a pot with a little water and heat it til it boils. Turn off the heat, smash it up a little with a fork or potato masher, then add the frozen crumbles if you want a little more texture. Let that sit for a few minutes to heat up the crumbles. (make sure you use a brand of crumbles that's heat & eat) Eat it with tortilla chips. Its sweet, spicy, and downright good. And its easy to adjust amounts. You can guesstimate ingredients according to what flavors you like more or what heat level you prefer. Any veggies you want can be added in, and it can just as easily be made in a big batch as an individual one. Enjoy!

My favourite soul food dish came from my first experience of soul food. Arriving in LA from Australia, I had the pleasure of visiting Native Foods where I fell in love with their Soul in a Bowl, but what really made the meal divine was the cornbread that I got with it. It was my first time trying cornbread and I fell in love with it and soulfood.

Cajun spiced 'crabless' cakes - combo of smashed potatoes, chopped red, yellow pepper, grilled corn, parsley, scallions, black beans - with spicy cajun spice, formed into patties, coated in breadcrumbs, fried lightly, and served with tofutti 'sour cream' and chopped cilantro - heat, cool cream, delicious as a meal with a salad or a nice snack!

I love steamed kale covered with freash blackeyed peas, smashed garlic cloves, diced onions, and tomatoes. Drizzled with olive oil and vinegar, and flaxseed for a crunch. And to finish off the meal right; Vegan Red Velvet Cake. Mmmmm yummy!

I love soul food. It never fails to leave me feeling warm and full. My favorite soul food dishes would have to be biscuits and gravy or hoppin' john. I could eat both of those for the rest of my life and be completely happy.

Sweet potatoe pie! When I win the book, I hope to find a great recipe for that and all the other soul food I no long eat since becoming vegan! Not that I was a soul food chef to start with. My ex sister-in-law is the great soul food cook. Maybe I can change a few minds with a healthy soul food feast that doesn't have "drippins, hamhocks, or chittlins." YUCK!

I LOVE red beans & rice and cornbread! DELISH! Thanks to PETA, my son (who is 8 years old) and I have become vegetarian. It has made us more conscientious. I'm looking for new recipes to try all the time because it is difficult having been raised on a meat-based diet and being in a meat-based culture. I would be very grateful if we won the cookbook.

Probably the best "soul" food would be some Indian dahl...it's not Southern American, but to me it's the soul-iest of them all...thick, warm, creamy, satisfying, and spicey.

My husband created a dish for the BBQ. It's sliced potatoes, Onion chunks, seasoning, butter and some water in a foil dish. You put it on the BBQ while you cook your other veggies. It takes about 20 minutes, and is so delicious.

Being from Jackson, MS and now living in Memphis, TN, I love Soul Food. It is a challenge living in the South and finding Vegan Soul Food. My favorite dish is spicy collard and kale greens with cornbread. I also love a good fried green tomato.

cook pink beans in a frying pan then mash them up and wrap them in a burrito with vegan sour cream, lettuce, and shredded soy cheese. fold up the burrito and fry with a bit of oil on both sides till golden. it's deliciouss and very filling!

I've just recently explored becoming a vegetarian & being from the South, I would definately love to have this cookbook!! Everything I grew up on was with meat or meat seasoning, so to have a Vegan Southern dish would be awesome!! My favorite dishes were my G-ma's green beans, cornbread, & anything with Bbq sauce!!

My daughter no longer eats any meat for the past 2 years. The rest of the family does. We all love collard greens. I now use vegetable stock, garlic and hot pepper flakes for flavor. Its great!! We all are great supporters and dont mind eat meatless :)

I have a favorite Filipino food that is purely vegan and overly delicious!! It is a Filipino-based tamarind soup (sinigang) made up of camachile seeds, yam, and sigarillas (winged beans)!!! Love it!!!

My daughters (ages 9 and 12) and I eat vegetarian and we have had to adjust our favourite southern dishes to suit our needs. I make a great veggie chili with toasted whole grain pita on the side. A few others we enjoy are veggie stew with brown rice and green tomato bake.
Would love this cookbook for more ideas. We can still enjoy southern foods and feel good about ourselves. And I am giving them the tools to prepare them for when they are adults and wish to carry on this healthy lifestyle.

I do not know much about Vegan food yet...just learning but my family is "IN" to Soul food! I would love to be able to blend the two with FABULOUS results! Thanks for the opportunity.

Red beans and rice with a can of cooked (drained) whole kernel canned corn added just toward the end of cooking. A couple of nice peices toasted wheat bread on the side.
Let the red beans and rice sit for 5 minutes, and Enjoy.

I love to cook and one of my favorite is tri colored collard greens. I like to cook them with mushrooms and kidney beans with some chili spice.

I make an old school Red Rice Purloo only I use veggie 'sausage' and veggie broth. I start out by sautéing red and green peppers, onion, celery, garlic, then eggplant. That all goes into the bottom of a casserole dish that is topped with two cups un-cooked rice that's been sautéed in peanut oil, then layer on the 'sausage'. I saute okra and add red wine and reduce down, then add veggie broth and a few spices, pour over entire casserole and cover tightly, then bake at 350 for over an hour. Ridiculously good! Just like Aunt Linda used to make... only better!

I don't really know soul food, sounds good though. I live on Mexican- never tire of it. Lots of rice n beans, tortilla wraps. Everything vegan and high quality and flavour and low fat and no cruelty- just gotta love it!

Native Foods vegan restaurant in CA has a dish called the "Soul Bowl" with red beans and rice, faux chicken, steamed veggies, sauteed greens drizzled with ranch dressing, and cornbread. It's a perfect combination of soul food flavors. My omnivore husband is totally crazy about it!!

There is nothing better than a plate of pinto beans, cooked cabbage, fresh tomatoes, and onions. Add a slice or 2 of some homemade cornbread and oh yea, it's GREAT!

I have been a vegan for almost 2 and 1/2 years. I love it! I love the way it makes me feel! I try to cook 3-4 new recipes a week and have yet to try any "soul" food...I can't wait to try these recipes!

RAMEN!!! (the veggie one of course) I just add some fresh vegetables and tasty things (peppers, onions, french onions, garlic, ginger, anything) put it in a bowl, pour boiling water and TADAM! 5 minutes, random things that were soon going bad in my fridge, and that's it, the meal is ready (and tasty!)

Definitely a book my husband might like. He's not vegan, but he's slowly coming around as I find new recipes, or ways to change his favorites that keeps him interested. One of our favorites is taco soup. Originally with ground beef and hominy corn, I substituted morning star crumbles for the beef, sweet yellow corn for the hominy, and added sautee'd bell peppers in three colors. The combination of taco seasoning and ranch seasoning gives it an interesting flavor, and over all he hasn't missed the beef once.

I had to echo all the other votes for vegetarian chili, but I LOVE the veggie chili my husband makes.
Also, vegan garlic mashed potatoes are delicious!
Lastly, a great cherry cobbler (vegan, of course) makes a tasty dessert!

The second Filipino dish that is purely vegan is one of my favorite: Tofu Adobo. It is consist of garlic, onion, soy sauce, vinegar, carrots and fried tofu. It is very delicious!

I love soul food! I grew up eating great southern food, but have run into some road blocks with soul food since I gave up meat. I love being a vegetarian and this book would help me with those great recipes I ate as a kid modifed to suit my lifestyle as an adult!

As a child, born in 1959 I was forced to eat meat. If I didn't I had to sit at the table for a couple of hours, then the plate was placed in front of me the next night. I usually waited for four days. I stuffed myself with vegetables and water. When my parents began to notice I would eat everyones vegetables they started to lay off. Tofu, Asparagus, salt, pepper, mushrooms, bake it with the tofu on top.

My maternal grandparents are from the deep south. I grew up eating the most delicious collard greens, black-eyed peas, and YUM, biscuits made from scratch.

I love okra, a great vegan way that my dad makes it is to cook it with tomato paste, olive oil and onions until it is soft and falling apart. I've never eaten this with cornbread but it is sounding amazing right now.

I loooove to have some fresh fried okra, green beans, and some squash cooked w/ onions & sea salt... makin me hungry just thinkin about it :) there are definitely a lot of other things I could list here but those are like some of my top fave things ever. oh, 1 thing I can't forget though are sweet potatoes!

I'd love to say what my favourite soul food recipe is but I don't have one! I've never eaten soul food, I've never even heard of it!! (I live in Australia) But the recipes people are mentioning sound soooo good, really making me hungry :-) I love trying new food so I hope I win!!!

Wow, this is a wonderful way to motivate an excellent eating style.
If I do not win the contest, I am going to look this up in my local library system.
My Mom could use this as she is a southern cook through and through, but needs to cut down on meat. She can still have the flavor, right?
I can see chili being a wonderful eye-opening recipe in this context. She loves her chili.
Personally, I grew up with the fried okra and yes a favorite!

There is nothing that come to Alfredo with fresh cream, parsley, seldery, mushrooms, brocoli, beans any one and sweet corm mielies I am not a meat eater but this with a fresh bread mixed with corm and seeds It is something every body have to try. It is a meal on his own
I pick up up 4 kg in 4 weeks but remember I am very thin from 42kg to 46 kg. I am proud to be a healthy eater no junk food, only fresh products green and fruities.

My two girls are vegan and have been for over 2 years. I am always looking for great recipes that we can ALL enjoy and this book would be PERFECT! We are from the South and everything is smothered and covered....a healthier option would be a blessing!
