Fire It Up: Grilled Eggplant

It's officially springtime, and that means sunny days, baseball, overgrown lawns, and lots of grilling. Eggplant is one food that makes it onto my grill often because it's delicious when prepared simply—with just oil, salt, and pepper—and can be used in more complex recipes.

FatFree Vegan Kitchen shares a recipe for Grilled Baby-Eggplants With Korean Barbecue Sauce that looks cute and delicious. On Chow.com, you can find a fantastic recipe for Roasted Elephant-Garlic Soup With Grilled Eggplant. Just be sure to use vegetable broth instead of the other options that are listed. And for a grilled eggplant recipe that is just screaming to be veganized, there is a Grilled Eggplant Panini.

What's your favorite food to grill?

Grilled Eggplant

1 medium eggplant
2 Tbsp. olive oil
Salt and pepper, to taste

•Cut the eggplant into 3/4-inch slices.

•Brush both sides of each slice liberally with olive oil, then sprinkle with salt and pepper.

•Cook the slices on a grill over high heat for 3 to 4 minutes on each side.

Makes 2 to 4 servings

If only I could alter my hubby's taste buds so that he liked egg plant...

Mmm ... Grilled mandarin! Whole one with complete peel! Ha ha! When it's heated, tear off the peel then eat the fruit & drink the juice! Ha ha! Best cure for cough & flu!!! & remember to rinse before grill!!! Ha ha!

Lovely - many of the tastiest vegetables, perfectly fresh and organic and bursting with flavour, are best cooked as simply as possible like this. Courgette (Zuccini) is lovely grilled on the BBQ too, also sweet potato... mmmm

Hi Amy,

My Sicilian granny taught me a little trick: if you don't have a grill and/or want to fry the egg plant, you should soak them in water beforehand. This will keep them from burning and taking on the oil. Much healthier and yummier!

Is eggplant worth eating? I've heard it is very low on nutrition as compared to say, broccolli, sweat potato, lentils. It looks cool, and it's simple to prepare, but I'm not sure it's worth the space it takes up in my garden or on my plate. Am I wrong?

Eggplant is highly nouritious. It is high in protein, and is also called "poor man's food" here in India. It s a good substitute for meat, as it contains proteins.

I usually add some minced parsley and garlic to this recipe! It's one of my favorite dishes!
