Coconut Rice Pudding

Rice pudding is a dish eaten around the world in many variations. It always contains some type of milk or cream to help achieve its thick, rich consistency, but the good news is that you don't have to stick with just plain ol' soy milk. Coconut milk is a great alternative to reach for instead.

This recipe for coconut rice pudding calls for a combination of both soy and coconut milks, which creates a nutty coconut flavor. To highlight this flavor, I topped the dish with a light dusting of yummy toasted coconut flakes. Enjoy!

Coconut Rice Pudding

1 1/2 cups cooked rice
2 cups unsweetened coconut milk
1 1/2 cups nondairy creamer or soy milk
1/3 cup sugar
Pinch of salt
Shredded coconut (optional)
Dash of cinnamon (optional)

•Combine all the ingredients except the coconut and cinnamon, if using, in a saucepan over medium-low heat.

•Simmer, stirring often, until thickened, approximately 1 hour.

•Stir in the shredded coconut and top with the cinnamon.

Makes 4 servings

oh my gosh! i was just craving this. i'm sure it would be amazing with cardamom too...

i would like information on the different beans and pulses used in vegatarian cooking as i wish to eat a healthy vitamin packed diet
and am concerned about getting all my vitamins and nutrients in my diet and do not understand the different beans

I am interested in becoming vegan, and have done it for a bit, but have recently had a huge setback. I became very ill with this lifestyle, and found out I am allergic to soy, and like legumes. Allergic to many fruits and veggies. How do I get the neccessary protien and variety into my diet?

I am also pregnant, which poses an added risk to the fetus. Not only lack of nutrition, but also my antibodies the baby's body may copy, and the baby may develop severe allergies as a result...
