
Traditional meringue cookies are usually made from little more than egg whites and sugar. A recipe that has eggs as one of its only two ingredients might seem hard—OK, impossible—to veganize, but Angel Foods has released a new cookie mix that is making it a whole lot easier.
You may remember the name Angel Foods from my contest from a while back to give away its vegan marshmallow kit. Well, Angel Foods has now released a vegan meringue cookie kit that requires just water, sugar, a mixer, and a good dose of patience to make those airy and light French cookies you might be missing.
Now is your chance to win one of these kits and test it out for me! We'll be giving away one vegan meringue cookie kit on The VegCooking Blog and one kit on PETA Living. I'm dying to test out one of these kits! I always loved the light, crisp, sweet airiness of meringues but hated the eggy flavor (and always felt queasy from it - turns out I am allergic to eggs, dairy and legumes... bleargh!)

Funny enough, my favorite cookie was always the meringue until I became vegan years and years ago. My mom used to bake meringue cookies often for us when my brother and I were growing up, so it's the cookie I most associate with my childhood. It'd be wonderful to be able to eat them again!

My favorite cookies are the chocolate mint melties from Dreena Burton, but honestly, I haven't met a cookie I didn't like. The meringue is something my DH has been asking for about 10 years.

i found a great recipe from sarah kramer's book "la dolce vegan". i forget the name but it's for a super easy, no-bake cookie. melted vegan margerine, natural peanut butter, instant rolled oats, cocoa powder, sugar, and nuts. mix together and make into balls then chill. foolproof and easy! they're perfect for when i'm having a chocolate craving!

Anything Vegan is always great because not only is it more tasty than foods filled with animal fats and anything else related to that, but it saves animal lives every day. Winning such cookies would of course open even more my horizon as i have only been vegan a month and a half. Great recipe's by the way, very mouth watering.

My FAVORITE cookies are the Double Chocolate Chip Cookies from Veganomicon, but with dried Bing cherries instead of Walnuts...they're so easy to make, but I always end up eating more batter than cookies! (I believe that the best thing about vegan cookies is that you can eat the raw dough worry-free!)

I've never had meringue before (I became vegan as a teen) so I'll have to try this. My favorite cookies are probably simple peanut butter cookies--peanut butter, flour, maple syrup, and some vanilla extract. None of which I currently have in my cupboard, or I'd go make some.

I made up a vegan persimmon cookie almost twenty years ago when I was nine years old. It has been my favorite cookie ever since. I never liked any cookie until I created this not-too-sweet, all-natural, earth-friendly, unique cookie. I never use packaged food mixes, but am willing to give one from a responsible company a try!

I absolutely adore the coconut lime cookies from Vive le Vegan....and whenever I make them for other people, they go nutty for them and constantly ask for more! They are so soft and moist and I love the gentle but tart flavor of lime mixed with the fun exotic coconut. Mmmmmm.

My favorite cookie would definitely have to be the Vegan Peanut Butter cookies. Yummm! I made them for my mom one day (she's strictly against veganism) and she LOVED them. She has me make them when she have her girlfriends over so they can snack on them. I've always been a Peanut Butter fan, I can eat basically anything with Peanut Butter, but these cookies top it off. I love them oh so much. I would love to try the Meringue cookies. My mom never made them for us when we were younger because she said that they were too unhealthy so maybe if she tried the Vegan Meringue cookies, she might actually like them and start making them. :)

My favorite cookies are these flour-less chocolate vegan bars. These bars are very decadent, rich and perfect for chocolate lovers. These bars have dark chocolate and soy milk, and are 100% vegan. Definitely CHOCOLATE HEAVEN!!!

Vegan Homestyle Chocolate Chip Cookies these are the best me and my mom we make these all the time they are really good and we add our own secret ingredient to them to have them taste a little bit different than normal cookies

I love no bake cookies - can be veganized pretty easily, though i admit i haven't tried it. :)

Cindy's Healthy Vegan Peanut Butter Banana Cookies because they are SUPER easy to make and healthy!
Mix together: 2 cups Whole Wheat Flour, 2 cups oats, 1/4 cup grounded flax seed, 2 teaspoons baking soda, 1 teaspoon salt. In separate bowl mix together: 1 mushed-up banana; 3/4 cup organic creamy (no sugar) peanut butter; 1&1/4 cup date sugar; 1/4 cup canola oil, 1&1/4 cup vanilla soy milk, 2 tsp vanilla. Mix all together. Form into balls, then press into flat cookie. Bake 350 for 12-15 min.

its a peanut butter one with oats in it and topped with applechips and nuts =D
mhh its too good! and very filling..i love to have a treat once in a while and its the best choice!

I don't have a favorite vegan cookie a part from the ones I try to make at home. I live in Jamaica and I am the only vegan I know so those products are not sold in my local supermarket.
My cookies taste good though, all I do is to add like raw almonds or oats in them and bake them.

You can use this recipe for Chai Tea Cupcakes/Cookies (just use a bit less soy milk)
Ingredients (makes 12, can be doubled, tripled like crazy)
• 1 C soy milk
• 4 chai tea bags
• 1/4 C canola oil
• 1 banana (maybe fewer?)
• 3/4 C sugar
• 1 tsp vanilla extract
• 1 1/3 C AP flour
• 1/4 tsp baking soda
• 1/2 tsp baking powder
• 1/2 tsp salt
• go nuts with pumpkin pie spice!
• pinch of white or black pepper
Preheat oven to 350F and line muffin pan with cupcake liners. Heat soy milk in a small saucepan until it boils, and then take it off the heat and steep the tea bags in it for about 10 minutes. Combine everything in a mixing bowl and distribute it evenly into the muffin tin (or spoon on baking sheet for cookies.) Bake for about 20 minutes (I only needed 18 in my oven) or until a chopstick/toothpick/fork comes out clean. Finally, top them with a dusting of powdered sugar! GEEENIUS!

Whole Foods Market makes the best Vegan Gingersnap cookies. They are so good and tasty. It goes great with a glass of cold rice/soy milk. They taste even better if you leave them in the refrigerator, too.

I love Nana's Cookies.
They are free from wheat, gluten, dairy, sugar, etc etc etc and they taste soooo good!
I think they come in choc chip, double choc and peanut... :)

My favorite cookie is one I designed for my gluten-free best friend and I: The Ultimate PB Cookie! It has only three ingredients and is the yummiest peanut butter cookie anyone has ever tasted... and that includes all omnivores that try them! I never end up getting more than one because even when I make a huge batch, they're gone before I get a second!

I love the fall because of pumpkin! I get regular, vegan friendly of course, powder chocolate chip cookie mix and instead of eggs and dairy I replace them with canned pumpkin, a little soymilk, and earth balance. The bomb!
P.S. Pumpkin in Bisquick pancakes instead of eggs is very fantastic too.

Mmmm I heart cookies. My favorite is chocolate chip. I doubt there is a vegetarian or vegan version of them, but my favorite brand Better Bakes is 70% organic and 100% delicious!

My favourite store bought cookies are Hydrox, which just came back for their 100th anniversary. yum. so much better than oreos i think.
my favourite cookies from a cook book are these lemon tea cookies my friend and i made a while back. they were so light and fluffy and melt in your mouth good. circles were boring, so we got creative and made them into fun shapes. okay, i admit, they were pretty obscene, haha, but what more can you expect from teenagers? i like to think of it as productive multitasking; we were studying the culinary arts AND anatomy all at the same time. :)

I always go back to the oatmeal raisin cookies from "The Joy of Vegan Baking"
They can be spruced up with craisins and walnuts, but they are delicious as the original recipe too

I have always loved chocolate chip cookie dough, due to the saltiness it has, but I have sometimes found the chocolate chips somewhat of a bother. One day, I left out the chocolate chips on purpose. It was great!! After becoming vegan and crying with happiness at finding Isa's chocolate chip recipe in Vegan with a Vengance, I made some chipless cookies. Everyone in the house loved them!!

I don't know about my favourite cookie but lately I've had a glut of courgettes and trying to make things with them........Courgette and carrot cake (stunning), spiced courgette and pear chutney (absolutely the best), but a word of warning DO NOT try to make courgette cookies they do not work!!!!!! :-((

My daughter makes a lucious fruitcake pecan cookie that is too die for. We live in Florida but make a couple of trips a year to georgia for peaches and pecans.I always make sure to bring extra for her so I can get my allotment of fruitcake cookies. She loves to make merinque cookies , so I would really like to get this for her. Her husband has had his gall bladder removed and they eat almost meatless now. Even I love the Boca and Morningstar products.

My favorite cookie is an oatmeal raisin cookie but not just any oatmeal raisin cookie. It has to be soft and chewy. I don't like crisp oatmeal cookies nearly as much (but I will eat them.)I love to add cinnamon into the mix too as it adds so much!

My favorite has to be oatmeal raisin. They are like heaven in my mouth. The delicious taste of sweet yummy grape compacted into a size of about a pea. The oatmeal in the cookie makes me think I am eating something healthy. Yay delicious and healthy. The best thing is, is when I know my oatmeal raisin cookies are cruelty free.
