Easy Blueberry Muffins

Muffins can be considered dessert and breakfast rolled into one. It's not a breakfast that one should indulge in often (as is true with most popular breakfast foods—think French toast and pancakes), but the occasional splurge in a morning sugar rush probably won't hurt.

To make vegan muffins, you can use a variety of egg replacers, from Ener-G to ground flaxseeds to applesauce. My favorite, however, is mashed bananas.

Bananas add extra flavor to baked goods and a healthy dose of potassium. They kind of take away from the "I'm a rebel eating dessert for breakfast" thing, but don't worry—only slightly. Enjoy!







Easy Blueberry Muffins

3 ripe bananas
1/4 cup vegetable oil
1 cup sugar
1 tsp. salt
1 tsp. baking soda
2 cups flour
3/4 cup fresh or unthawed frozen blueberries

•Preheat the oven to 350°F.

•In a medium bowl, mash the bananas with the oil and sugar and mix well.

•In a small bowl, sift together the salt, baking soda, and flour.

•Add the dry mixture to the banana mixture and stir by hand until the two are thoroughly combined. Fold in the blueberries.

•Pour the batter into a lined muffin pan.

•Bake the muffins for 25 minutes, or until a toothpick inserted in the middle comes out clean.

Makes 10-12 muffins

Thanks jess! I use a Canon PowerShot SD1000.

Marisa, yes, I think you should be able to replace the blueberries with other types of berries. You may have to chop them before adding to the batter if they are large.

Just made these. So fast, so yummy! Mine took 30 min, but I used 1/2 whole wheat flour. Still sweet and delicious!

These look really good. If I had blueberries in my freezer, I'd be baking them now!

You mentioned adding a banana... the same trick works for chocolate chip cookies, as well.

I substitute 1 banana for 1 of the eggs.

I just finished my first 30 Days as a vegetarian and it was much easier than I expected. When I signed on to this site and saw the blueberry muffin recipe I laughed. The grocery store had a sale yesterday and I bought six boxes of fresh blueberries and woke up asking myself "What am I going to make with all these blueberries?" Thanks! These are tasty. Mine took 30 minutes to bake. Be sure not to undercook them because they get a bit gooey.

Yes you can use olive oil Elise. That's what I use.

You can use applesauce instead of oil.Much healthier.Just MO.Instead of buying large jar of applesauce you don't need if have small family I often use a jar of baby food applesauce.Just the right amount.

I've just made a batch of these with raspberries rather than bluberries, and half with walnuts in too. Scrumptious. I'm going take some to work tomorrow and pull the vegan wool over their eyes, so to speak.

Do I need to use plain flour or self raising flour?

Also do you mean baking powder or bicarbonate of soda?

these are pretty good, but I think I'll put cocoa-powder in them next time instead of berries... The banana-flavour is very strong and the berrys only tasted sour compared to the dough... With cocoa-powder I might get very yummy banana-chocolate muffins...
It was an adventure for me to make these, because I had no idea how much a "cup" is and had to search converters at the internet...
The only vegan muffins I've ever made before tasted as if something was missing in them... your's don't...
I like them (but I wished I would have used cocoa-powder... the berrys are SOOOO sour!)
