If you saw my post yesterday for the Southwest Veggie Burger and suspected that I would hold a contest for the featured product, Match Meats, well…you were right! Now is your chance to win a sampling of gourmet meat alternatives from Match.
One lucky winner will receive a 1-pound package of each of Match's top-selling vegan meats, including the "beef" I featured in my post yesterday. Just leave a comment below telling me what recipe you would love to use the product in, and the best answer, as determined by me, wins! The contest ends on June 13, and the winner will be notified by June 20. And don't forget that you can order the product on the Match Meats Web site if you're not the chosen one.
And just so you know…by leaving a comment, you're acknowledging that you've read and agreed to our privacy policy and our terms and conditions. Good luck!

I love veggie meats, there are so many different reasons to convert over, I don't understand why flesh eatters aren't more open-minded!

I would love to use the Match Meat to make "tajaditas."
Let me explain. I'm from Honduras and in my country, we eat tajaditas as a snack. They can be found in corner "bodegas" or corner stores that sell all sorts of snacks. I've been craving tajaditas for quite some time.
Here is how you make them:
Sautee your ground "meat" with onions, green peppers, garlic, jalapenos, cumin, black pepper and salt. You can add a little tomato sauce as well. Your "meat" should be a little juicy and not too dry.
Slice cabbage really thin. Lightly season the cabbage with lime, black pepper and cumin.
Take a couple of green plantains (or more depending on how many servings you're making), slice them and fry them. These are your "tajaditas."
I'd like to actually set up the little red snack baskets and line them with the red and white checkered papers. Fill up the basket with tajaditas, top with some of the "meat" and top that with the sliced cabbage.
That is what I would make with my Match Meat!

oh! oh! a vegan crab rangoon would be perfection. i have been eying a recipe on about.com for a while. here is the recipe veganized...
vegan crab rangoon
ingredients:
8 oz vegan cream cheese
8 oz faux crab meat
1 tsp red onion, chopped
1/2 tsp vegan Worcestershire sauce
1/2 tsp light soy sauce
freshly ground black pepper, to taste
1 green onion, finely sliced
1 large clove garlic, smashed, peeled, and finely minced
1 package vegan wonton wrappers
1 small bowl water
Oil for deep-frying, as needed
instructions:
1.) Combine the "cream cheese" and "crab meat". Mix in the remaining six filling ingredients (up to the wonton wrappers) one at a time.
2.) On a flat surface, lay out a won ton wrapper in front of you so that it forms 2 triangles (not a square).
3.) Wet the edges of the won ton. Add 1 teaspoon of filling to the middle, and spread it out toward the left and right points of the wrapper so that it forms a log or rectangular shape (otherwise the wrapper may break in the middle during deep-frying).
4.) Fold over the edges of the wrapper to make a triangle. Wet the edges with water and press together to seal.
5.) Keep the completed Crab Rangoon covered with a damp towel or paper towel to keep them from drying out while preparing the remainder.
6.) Heat wok and add oil for deep-frying. When oil is ready (the temperature should be between 360 - 375 degrees), carefully slide in the "Crab Rangoon", taking care not to overcrowd the wok. Deep-fry until they are golden brown, about 3 minutes, turning once.
7.) Remove with a slotted spoon and drain. Serve hot with Sweet and Sour Sauce or Chinese Hot Mustard.
Yields: 48

It's very hard to choose which product I would like to use so I've narrowed it down to 2, the ground chicken breast and the italian sausage.
The ground chicken I would like to use to make some faux chicken cutlets, breaded and baked in the oven. This also would be good with some marinara sauce and teese cheese for a parmigiana. The italian sausage would be a great addition for my lasagne. I hope I win, these faux meats are not available where I live in northern California.

Great blog! I really enjoy reading!
I would love to make my vegan meatloaf sandwiches the Match Meats "beef".
I would simply take:
1 pound "beef"
1 medium green bell pepper diced
1/2 cup onion of choice
Basil
Oregano
Salt
Pepper
Parsley
Chili Powder
Mix it all up and form a loaf on a greased cookie sheet. Bake on 475 for 25 minutes covered with foal. Then broil for 5-7 minutes uncovered. Serve on a toasted kaiser bun with a homemade tomato sauce on top of "meat". I also sometimes add hot pepper rings, lettuce, and/or a slice of onion to top things off. Just depends on my mood.

I would love to use the "beef" to try and make a vegan version of my mom's delicious porcupine meatballs. They use uncooked rice in the balls (hence the 'porcupine' aspect) which cook in this yummy-tomato based sauce which they soak up as they cook on the stove, and then you serve them over rice.
:)

I would use the "meat" for my burritos! Everyone loves my burritos, i make them for my fellow co-workers all the time. I use Morning Star Farms "beef" crumble, refried beans, onions, pepperjack and monterey jack cheese and use a taco seasoning to season the "beef". I then wrap the the "beef", onions, refried beans and cheese in flour tortillas then individually wrap them in aluminum foil and bake at 350ish for about 1/2 hour. You should pick me because my burritos are the best, none of my co-workers are vegetarian and they all like my vegetarian burritos better than when I used real beef before i went Veg!!

Hi Amy,
I was excited to read this post on Match Meats. My husband and I have been vegan for almost a year now, and we're happy with our choice. But every once in a while, we find ourselves craving something from our omni life.
It's close to that time of year when my grandmother passed away, and as usual, I find myself thinking of her. Most of my memories involve her being in the kitchen, and one of her best recipes was Goulash which I haven't had in ages as it is a beef based recipe and I stopped eating beef a long time before going vegan.
If I win the contest, I would try her recipe for German Goulash Zuppe. It would be truly wonderful to be able to recreate that meal again.

I'd love to have the opportunity to try new "meat"less products in many recipes I already make, ie; meat-less loaf, meat-less meatballs, meatless burgers, etc. I'm doing this first for the animals, the environment and myself...looking for any and all ways to change myself, my world around me and those I come in contact with.
Thank you,

I would use vegan match meat beef to make Kefta, a traditional Lebanese recipe that my father makes. He puts Kefta patties (they look like hamburger or meatballs), in a baking dish with sliced tomatoes, potatoes and onions, then covers it in a spicy tomato sauce. I feel badly that every time he makes this wonderful dish, I opt out because I'm a vegan now. I think that if I used the vegan match meat beef to make Kefta, and that if I made it taste almost like the real thing I would probably make my father very proud.

Wow if I had 1 lb. of each vegan pork, beef and chicken..I would find a way to savor every last bit of it...especially the beef!!!! With the beef I would use a tiny bit in everything that has beef like tacos, a burger, spaghetti sauce..one thing though, my husband and I love to make a chipotle style dinner with guacamole, corn salsa, lime rice and all so with teh beef I would definitely season it with a homemade fajita season and maybe some chipotle peppers in adobo sauce and cook it up that way to add to my Chipotle style burrito. Also being half filipino I miss the good dishes my mom always makes so I would definitely put the meat to use to make some fried lumpia or egg rolls with the beef, some chicken adobo, saopo which is a yummy pork filled dumpling..if i could have that with some vegan pork...OMG I would be sooo happy!!!! Either way if I had some vegan meat I think like everyone else I would find a way to use and savor every last bit, not letting any go to waste and if I could make some fried lumpia or saopo with it I would definitely have everyone give it a try before telling them it's vegan!! But until then...I still love my only available vegan meat..my boca burgers!!

What would i NOT make with faux meats??? i LOVE to cook and for years i struggled with my desire to eat ethically because of my passion for cooking delicious foods... i was just too afraid my meals just wouldn't be the same! fortunately in the past 6 months i have been able to throw away my fears and have jumped right into experimenting with alternative protein sources and am proud to say the less meat i eat the less i want to eat meat! there are so many wonderful healthy and ethical meals to make it's truly been a revelation. i feel extra proud too because of the impact i have seen with those around me... my parents, fiancee, and many friends all know me as a good cook and are trusting and delightfully surprised at my new vegan/vegetarian cooking talents and have also become inspired to reduce their meat consumption as well! even co-workers have shown interest in the home-made meals i bring for lunch and one (so far!) has even decided to try being vegetarian too! i'm a teacher and have the summers off so throughout this summer i will be hosting a weekly bbq/potluck for all my friends and am hoping to get more people turned on to faux meats. i plan to make everything i can! hmmm off the top of my head? the first recipes i would like to try are the italian meatballs from match meats website with a veggi-ful pasta dish and i would also love to try the "crab" in sushi, which is a party favorite... i have been wanting to make shish kebab so i would have to experiment with which makes the best replacement for the "shish" but i know that'll be a great party dish too with fresh naan and curried chickpeas.
mmmm hope to sample match meats soon!

I have tried many different things, including other meat substitutes and mushrooms, but nothing yet has been as good in flavor as the real thing! I would honestly try these products in all of my Polish home cooking!

I would love to try Match at one of our weekly gatherings and see if I can't finally nail down the perfect breakfast burrito.

I want to make persian chelo kabobs(beef served with basmati rice)! It was my favorite dish when I ate meat, and my parents still make it, everytime I get so tempted to eat it. But, it's been 4 years now, and I've been very strong. It would be amazing to be able to eat it again and make them for the rest of the family and show them I can eat anything they can!

Some days after work I am so hungry and tired and on those days I like to make my quick dish using my veggie meat. I use fresh carrots and onions (Sweet Ones) along with potatoes. About 2cups each. Brown in olive oil the veggies then add about 1 cup veggie beef-like chuncks ( Boil them first in 1/2 cup water. with 2 tablespoons jerk spice added). chopped celantro, frest garlic. Combine 2 pack of your favorite Beef-Stew mix with browned veggies and veggie beef chuncks
Add water as per package directions , simmer and enjoy.
This is a wonderful dish to serve to people who think that this veggie meat is a joke. This is great!

PLEASE choose me to win the MATCH MEATS products! I've been vegetarian for 20+ years and have a son who's been veg since birth (he's 5) and my husband went veg 7 years ago. My husband grew up in Indiana. His grandfather was a jewish butcher. he comes from a HUGE meat eating family. ANYWAY--- I should win this for him. for us. for my family!! This would give him another oppertunity to choose a veg product over a real meat and see what a good decision he's made and kept all these years. Plus my son hates food- so any chance to get him to maybe like something new is a blessing. And I'm a home chef. I LOVE to cook w/ fake meat products and I'm so eager to try this one! We live on an island in Maine so we do not have access to many products out there! And, to top it all off... we're dirt poor. So, we gladly accept contest-loot handouts! :)

Well...I'd love to try them all. But the first recipe I would use them in is Mexican Stuffed-Pepper Biscuit Tostadas. It's a recipe I adapted from the Pillsbury Bake-off Contest Finalists recipes. The original recipe called for ground beef, but I used vegan beef crumbles from Morning Star Farms in place of the meat.
Cynthia Bowser
Jonesborough, TN
Bake-Off® Contest 43, 2008
INGREDIENTS
2 large bell peppers (any color)
4 cups water
1 lb vegan beef crumbles (Morning Star Farms Grillers Prime Crumbles)
1 package (1 oz) Old El Paso® taco seasoning mix
1 cup Old El Paso® Thick 'n Chunky salsa
1 can (16.3 oz) Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits (8 biscuits)
2 oz. vegan Egg substitute
1 cup shredded vegan Mexican cheese blend or vegan Monterey Jack cheese (4 oz)
1/2 cup vegan sour cream, if desired
DIRECTIONS
1. Heat oven to 350°F. Lightly spray large cookie sheet with CRISCO® Original No-Stick Cooking Spray.
2. Cut each bell pepper lengthwise into quarters, making 8 pieces; remove stems, seeds and membranes. In 2-quart saucepan, heat 4 cups water to boiling. Add bell pepper pieces; cook 5 minutes. Drain well on paper towels; set aside.
3. Meanwhile, in 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix and salsa until well blended; set aside.
4. Separate dough into 8 biscuits. Place biscuits 2 inches apart on cookie sheet; brush with egg.
5. Press 1 pepper piece, skin side down, on each biscuit. Spoon heaping 1/4 cup beef mixture into each pepper, spreading to cover pepper evenly. Sprinkle each with 2 tablespoons cheese.
6. Bake 18 to 22 minutes or until cheese is melted and edges of biscuits are golden brown. Cool 5 minutes. Top each with 1 tablespoon sour cream.
High Altitude (3500-6500 ft): In step 5, do not add cheese. In step 6, bake 20 minutes. Add cheese; bake 3 to 5 minutes longer or until cheese is melted.

I would stuff things with cheese and fruit and cover it with crushed nuts like pistachio's or hazelnuts.
There's just so much you could do. But this is one of the recipes I would really like to do;
Vegan Apple Sage Pork Burgers with Apple Slaw
Dry Ingredients:
1 lb Match Ground Pork
½ Cup Finely Diced Dried Apples
¼ Cup Cracked Wheat (Bulgar) Prepared
¼ Cup Potato Flakes
2 ½ Tbsp Garbanzo Bean Flour
1 Tbsp Granulated Onion
1 Tbsp Vegan Chicken Powder
1 Tbsp Ground Sage Leaves
2 tsp White Sugar
1 tsp Black Pepper
½ tsp Salt (Optional)
½ tsp Ground Ginger
¼ tsp Cinnamon Powder
¼ tsp Allspice
Wet Ingredients:
½ Cup Apple Sauce
2 tsp Soy Sauce
2 tsp Fresh Minced Garlic
1 Tbsp Apple Cider Vinegar
2 Tbsp Truffle Infused Oil
Or 2 Tbsp Vegetable Oil.
Appleslaw Topping Ingredients:
2 Large Grated Green Apples
½ Medium Onion (Finely Sliced)
¼ Cup Dried Black Currents
¼ Cup Veganaise Mayo
1 tsp White Sugar
1 tsp Apple Cider Vinegar
Burger Bun:
4 Whole Wheat Burger Buns
3 Tbsp Earth Balance Margarine
Equipment:
Skillet or Grill
Spatula and Tongs
3 Bowls
Measuring cups and spoons
Cutting Board
Good Knife
Method:
Mix the wet ingredient in a separate bowl. Once this is done, in a large bowl combine the wet mixture with the dry and using your hands, massage all the ingredients together. Form into four large patties and cook in some oil at medium heat until browned and done through.
While the patties are cooking, start on the appleslaw. First mix together the vinegar and sugar, then once the sugar is dissolved, add in the veganaise. Slice the onion and grate the apple and pour the veganaise mixture over the apple and onion.
Butter the burger buns and warm on the grill. Top the buns with the patties, appleslaw and serve with a side of chunky oven fries. Yummeee!

I have recently gotten married and my husband and I are trying to become vegan. It is harder than we thought to rid ourselves of everything with animal products in them. The hardest for me is marshmallows( which I always seem to crave) but for my hubby it is beef. I wanted to make him lasagna. I tried a meatless lasagna it was ok but did not have the satasfaction of lasagna with lots of hamburger. I would love to try these faux meats. My husband is in the army and we dont have alot of excess money. Going vegan has been a little tough on finances. Winning this contest would be a great way to try some meat alternatives.

Over the years I've made the transition from little to no meat to all out vegetarian (nearly vegan, except for eggs). I've taught my husband, a former "meat n potatoes guy", to incorporate more vegetarian choices into his diet and to dispell his opinions that it all "tastes like rabbit food", as he used to say. We love trying out new recipes and playing around with old favorites to make them meatless.

I am the mother of 5 children ages 30 to 15 and I have 1 grandchild age 2, My husband and I have been married 32 years and have raised all our children on a veg/vegan diet. It is now very easy to be a veg.or vegan unlike when I was growing up, or when I first started having children, which by the way, I have had very healthy, alert, bright, calm babies. I am in my 50's
and I am often told by people that they can't believe I am the mother of 5 and the age I am. I think without a doubt it has to do with being a veg.when I was younger, now a vegan. Because when you think about what you eat you also become more aware of the world around you and it changes the way you think about many aspects of your life. Okay, what would I make? All kinds of things, though I don't use the veggie meats that often, I have used for the following when guests come over mainly because it gives them a good idea of how good something can be without meat. I even won a chili contest with my vegan chili recipe.
VEGAN CHILI
LASAGNA
VEGAN LOAF
some type of PASTA,with vegan meat either in the
sauce or made into balls
TACOS
VEGAN STROGANOFF
STEW (like the traditional beef stew)
EMPANADAS
STUFFED PEPPERS (though these are wonderful made with rice)
BROCCOLI STIR FRY
SLOPPY JOE'S
VEGAN POT PIES
SHEPHERDS PIE
VEGAN BOURGUIGNONNE
CURRIED VEGETABLES
For the people who may be interested can I encourage you to explore a herb and spice section of your grocers, I live in a large city so we have a spice store where I buy my spices and dried herbs in bulk, and I grow my fresh herbs. But when you use packaged spice mixes like Old El Paso they may be tasty but they are very high in salt. As well as most packaged products, if you can learn to cook from scratch it may be a little more time consuming but, it is much better for you overall and you cut down on waste, if you have a garden, do compost and if you don't still save you veg. waste and either find an individual who does garden and give it to them or find a community garden and do the same.

I would like to enter the contest as I am a new vegetarian trying to get my 10 year old daughter to try new recipes. (not to mention my husband of 17 years.) Their favorite recipe is Italian Pasta and I now have to make it for them and then separate out some for myself prior to adding the meat. Just cutting up beef for the recipe has become difficult; I won't go into the details but I would LOVE to have my family try the recipe "meatless". It is a wonderful dish and is as follows:
8 oz Penne pasta
1 tsp olive oil
1/2 cup sliced onion
2 cloves garlic thinly sliced
1 can diced or fresh tomatoes (if fresh add 1/3 cup water)
1/4 cup Red Wine of own choosing (I use Merlot)
2 Tbs tomato Paste
1/2 tsp. crushed red pepper
1/2 tsp basil
1/2 tsp oregano
1/4 tsp salt
1/4 tsp pepper
And the Kicker: right now I have to add 1 pound of steak or ground italian sausage. I would LOVE to have them try the Match meat instead and not have to separate out my dish from theirs.
The cooking directions: Cook and drain pasta. Saute onion and garlic in oil then add meat until cooked. While that is cooking, combine tomatoes, wine, tomato paste, and all seasonings. (From this I set aside a small amount of sauce and pasta for myself) Once meat is prepared, add cooked pasta and sauce mix and simmer for 10 minutes. I put soy cheese on the top and put it under a broiler for a few minutes for my daughter's benefit.
Winning this would be an awesome introduction to my vegetarianism. I am already on the prowl for ways to change my "family favorite" recipes.
Thanks so much!

The reason why i would love to win this contest is for two reasons. First, my dad and sister still eat meat, and i would love to show them that eating faux meat would be just as good, AND humane. Also, a lot of my classmates still make fun of me that I'm a vegetarian, I'm still working on proving them wrong, and that it is better. Some foods i would like to make would be tacos, enchiladas, tandoori "chicken", and some other types of food that i know will taste great.

I am the manufacturer of Match premium meat alternatives. I am so gratified to read all the comments and would love to know how people cook with Match meats-I learn so much from our customers. One lady approached me and told me how she makes chicken enchiladas for Christmas Eve every year-she used Match chicken (microwaved it), shredded it and made the enchildadas-=and her family (all meat eaters) never knew. the notable thing is that she said it saved her two hours (boiling the chicken) and she didn't have to deal with the skin and bones and fat...I never thought about that-but there is no waste with our products.
Someone said the pork doesn't have enough flavor-for those that tried it-should we boost the flavor?
Whole Foods here in St. Louis uses the Italian Sausage with their penne-it is fabulous...
Thank you so much for your help and advice...

However I wanted to let everyone know - when it comes to veggie Worcestershire sauce, the very best substitute I have found is Pickapeppa sauce (www.pickapeppa.com)

I love using faux meat for a seitan "beef" stew. It's quick, easy, & very tasty. A favorite amongst my not-yet-vegetarian friends!
In a big pot add 1-3 in. pieces of carrots, potatoes, onions, celery, mushrooms, a handful or two of barley, and seitan. Add some a splash of Bragg's Liquid Amino or soy sauce, a squirt of agave sweetener dill, vegan boullion cube, and garlic. Cover in water. Boil briefly and then cover & simmer until water is mostly gone. Better if you can wait till the next day to serve when flavors have gotten stronger & mixed through.

Well, since I have been a vegetarian I have got a lot of slack from family and friends, I know this will sound very sneaky and maybe even a little bit harsh, but I have been planning on making a LASANGNA (Family Favorite)for my family (Mother & Sisters), not telling them that the meat (and cheese) is actually "faux" and having them eat it thinking its actually meat, and then asking them how well they liked it, and let them all know that being vegetarian is not that bad in fact that they just had a vegetarian prepared meal, and anyone can do it!
I also make a special Chicken style casserole, and I would love to use these products for that as well.
Thank you.

Arroz con pollo (Rice with Chicken) is a typical Cuban dish. My version is Arroz "sin" pollo (Rice WITHOUT chicken) and it is a great Cuban vegan meal, so I hope I win some Match Meats.
Basically, you want to take some long-grain white rice, a good blonde beer (Miller High Life was used in my traditional Cuban family), some saffron, and some salt and get that boiling with sufficient water (beer and water should equal twice the amount of rice used). When it comes to a boil, cover and simmer.
Take the "unchicken" and saute it in olive oil with onions and crushed garlic. I like to really brown it.
Stir the unchicken mixture into the rice pot. When the rice has softened and most of the liquid has boiled off, add lots of fresh peas (a half a cup) and use a fork to fluff up the rice and mix in the peas, which will blanche and warm quickly.
The rice should be a nice blazing yellow and the flavors of the olive oil, garlic, onion, and saffron will leave you with the definitive Cuban dish without harming any of our bird friends!

I would make my dad's famous enchila'a -- being his secret recipe I cannot give it here without his permission but I will say that tofu and morning star meal starters don't do it justice. My family and I go to my grandparents' house every Sunday and they cook. They do things like the Atkin's diet which is virtually all meat and don't know how to cook vegetarian they just make a salad with no dressing. My dad was a rancher so he doesn't mind at all. It would be nice for me, my mom, and sister to have a real Sunday family meal that tasted authentic while we watched them eat steaks and chicken wings.
Thanks so much for doing the contests!!

I'm just new to the "vegan" lifestyle and was so board of cooking for my family. Seemed like the same things over and over. Now I've been reinspired to "cook". Although I often make mistakes, and usually have to follow a recipe, it would be great to have the perfect ingredients on hand (like match products) because then I could concentrate on the cooking and creating and not have to worry that I'm using something that has a "forbidden" ingredient, or one I overlooked at the grocery store. These "meats" sound yummy and I would love to start creating Italian style meals for my family with these products.

Okay. I am VERY new to the vegan world. As a matter of fact, we are still trying to convert. I have recently lost over 50 pounds, and have started researching diet, and nutrition for ways to take my health and fitness to the next level. I am motivated by everything I have read so far. I received the free starter kit from PETA, and had my husband read it. He is now more open to this, but loves his grill. I have been collecting recipes that use the grill, and the southwestern veggie burger was a suprising hit! Budget is an issue for us, and this "meatless meat" contest would really start us off on the right foot. Thank you!

Recently, after eating at a popular Fast Food restaurant, I suffered severe abdominal pains. I realized that I desperately need to make a lifestyle change. I've already cut out beef and I'm seriously considering eliminating all meat products. I've never had the opportunity to try faux meats before, but I'd love to use some of your faux beef in "Thai Green Curry". While studying to be a Thai Linguist in the Army, my teacher taught me how to make this dish, using Coconut Milk, Basil, Thai Spices and fresh vegetables, like Eggplant, Raw Green Beans and Green Bell Pepper. It was one of his favorites, from when he was a young boy in Thailand, and I was very fortunate that he passed his recipe along to me. Since then, I've enjoyed making Green Curry on special occasions, for my friends and family. It is my absolute favorite "feel good" food; every time I make this, I'm completely overwhelmed by the satisfaction that it brings and I can imagine nothing better than adding "guilt-free" to what I like to call the "enjoyment factor". Thank you for your time and consideration. I'll be on the edge of my seat until June 20.
Sincerely,
Joseph H.

Still, I've been trying to perfect my veggie "meatloaf" recipe (oatmeal seems to be the secret) and I might give Match "beef" a try with that recipe. Stuff small dinner rolls with a mixture of ground meat (I use Soy substitute but would love to try this new faux meat), Ortega chilis, and Jack Cheese (I use a Soy substitute cheese). Microwave a few seconds to smush the flavors together. They are really yummy, reheat well, travel well to potlucks, and people never suspect that no animals were harmed in the making of them.
