You Write the Menu

Do you miss your favorite childhood meal because you're not quite sure how to veganize the recipe? Have you tried a delicious vegan dessert that you're dying to know how to make? Well, now's your chance to have me do the dirty work and find the best recipe for the food you're craving.

That's right, I'm letting you decide one (or more) of my upcoming posts. Just leave a comment below telling me which recipe you want to see on the blog. You can suggest something vegan or not, and I'll figure out the best way to make the recipe sans animal products. I will choose the most intriguing, the most hunger-pain-inducing suggestion and feature it here. Please leave your comment by April 25.

I'm willing to bet my arm that I'll get a few outrageously difficult suggestions as a test, of sorts, but that's OK because it's your chance to write the menu—and I welcome the challenge.

Oh, yay! I am so glad you are doing this! I am horrible at veganizing. I actually have a few things in mind.

First cinnamon rolls. There are a few recipes already out there, but they all seem to either make a huge batch or have various add-ins. I would love to have a plain old cinnamon bun with vegan cream cheese icing!

second. Chocolate eclairs! mmm

Third, the most envied recipe : vegan doughnuts!!!

Beef Stroganoff, please!!! I miss that dish so bad...I even liked the Hamburger Helper kind, so anything you come up with has to be better than that, right?

The hardest part of cooking my old time favorite foods is ditching the milk and egg and still making it taste great. below is a list of the foods I always found to be most yummy. I would be so thrilled if any of the foods I listed could be made Vegan.


strawberry shortcake
chocolate chip pancakes with melted chocolate syrup
cresent rolls
scalloped potatoes
chocolate cream pie
alfredo garlic basil pasta sauce
veggy pot pie in a garlic herb sauce
blueberry muffins with crumb top

Boy, is tis gonna be interesting!! I have a few requests, and I hope none of them are TOO terribly difficult:

-flan! The only recipes I have seen involve coconut milk and I can't stand coconut (but I'm trying to learn to like it! It's just taking awhile...)

-key lime pie

-Ethiopian food and Injera bread! I have been wanting to try Ethiopian food for awhile but have no idea where to start when it comes to good recipes!

I can't wait to see what you come up with no matter whose suggestion you choose!

My choice would be Italian Chicken. It's cubed chicken that's dunked in egg, then breadcrumbs, fried in butter. Then you bake it in a wine, butter, chicken broth sauce with munster cheese and mushrooms on top. I really miss it.

I miss chicken nuggets so much, I tried the vegetarian stuff in the shopping centre but to me it tastes like rubber and is very chewy. Please help me.

1. egg custard pie or chess pie...I miss it so much!

2. fettucine alfredo...for the alfredo sauce, obviously, but also Classico makes a sun-dried tomato alfredo and I want to try to fake that.

3. This will sound weird, but...eel (unagi) sushi.

4. And finally, any kind of "faux" smoked salmon and faux cream cheese...I miss bagels and lox!

I was wondering how you could
tackle a menu, like what we normally would eat for Christmas meal or Thanksgiving? How do you replace roast turkey and stuffing?

I do not think I could ever stomach eating turkey again... But I will miss the aromas, etc...

Spanish tortilla please.

I have the hardest time making vegan "egg" based dishes like quiches, omelettes, and Spanish tortillas. They always end up tasting very similar to each other and not really the right consistancy.

I think it would be amazing to have vegan Spanish tortilla with potatos, spinich, onions, and tomatoes that actually had the right texture and consistancy. :)

for the poster who wanted cinnamon rolls, kroger sells vegan orange rolls, and possibly vegan cinnamon rolls as well. they're under the generic store brand and near the pillsbury cookie doughs, etc.

I'd like to second some of the options posted by others:

HUGE ditto on the quiche and Spanish tortilla ideas.

Last but not least, my own contribution to the list, I used to love those Swedish Meatballs from Ikea with the creamy sauce.

These are all great ideas, but I have seen one vegan recipe or another for almost all of them.

The one recipe I haven't been able to find is for a vegan steak. I'm very embarrassed to admit this now that I have been vegan for 11+ years, but I used to REALLY like the occasional steak and REALLY miss it.

Now, I'm familiar with using portobella mushrooms for a "meaty" taste/texture, but I'm talking about something with the texture as well -- a thick, juicy "steak" just like many of us had growing up.

Perhaps made from tofu/seitan?

What do you think?

hmm... I've always wondered how a vegan steak would taste. I second that idea. Also, I have a small list of things that I would love to see veganized
.vegan McDonald's or Wendy's "chicken" nuggets
.Vegan (I can't believe I'm going to say this but...) KFC (I cringe at that sound) style macaroni
.vegan tacos (you know, how to make them taste good)

I have but one request: vegan Cheese Pennies. Some call these cheese straws. I remember them being super cheddary. I've also seen cheese penny-type dough wrapped around green olives for cocktail nibbles.

I haven't had too big a problem veganizing, but having them come out the way you want is totally different story..I definitely have to agree with the many choices already given like beef stroganoff, the famous angel food cake, oh and the perfect cinnamon bun..but as I was thinking of something different I thought about when we go out and my husband picks up a huge soft pretzel or a churro...now if there were some good vegan recipes for those..especially the churro..that would be so awesome because churros smell so yummy!!!!

OOOH..I know I just added but I forgot one thing..if anyone could ever come up with some vegan recipe for some chocolate spread such as nutella..I think I would be in heaven....before I became vegan that is allll I ate and I do have to say I miss a good chocolate spread!!!

How about a vegan French Toast? I know you can use soy milk, but not everybody can eat soy....

I would like to know about rice crispie treats. I know that it is probably impossible because of the gelatin in the marshmallows, but it would be great if there were a way!

honestly, there is not much i miss or think is that hard to make vegan, but i would be incredibly happy if you made a good ol fashioned tuna sandwhich. i miss them so much! i'd love it!!!! please, just keep it in mind for sometime

Tres Leches please!! I don't know how to make a cake without the eggs, I don't know what to substitute for the evaporated milk and the condensced milk. I don't know what to do with the icing.

I have to agree w/ a lot of people on here, Beef stroganoff would be fabulous along w/ alfredo sauce, cinnamon rolls and I would love a reciepe for Tuna! I haven't found tun-no in forever I miss it:(

Rosetta's Kitchen in Asheville, NC makes a Smoky Tofu Wrap that is the most delicious thing I have ever eaten! I would love to be able to make that at home since I don't live there. So far, I haven't been able to make grilled smoky tofu that tastes as good. I also miss Fettucini Alfredo, and potatoes that have been cooked in a crockpot with a roast for hours.

Popovers that POP. There are some veganized recipes online but they do not pop properly. Rather, they end up looking like a muffin.

How about Italian meals such as rattoille, pasta, cannaloni, or Indian meals such as vegetable curry, or oriental cuisine.
Or soul food.
Perhaps your site fans could contribute to a recipe exchange.
I love ethnic food, especially since my family moved to the USA in the 1920's during a famine, and have no family recipes (because they were starving).

Thea: To Alice & Nichole, http://www.randomgirl.com/recipes.html has vegan recipes for doughnuts and eggs benedict, (and many more) though I have not tried those 2. To Catrina, the Veganomicon (Isa Chandra Moskowitz) has a delicious recipe for individual apple galettes (which is just the fancy French word for 1-crust pie). Pilsbury cresent rolls are usually vegan, Vegan Cupcakes Take Over The World (Isa Chandra Moskowitz) has a great recipe for cupcake-sized strawberry shortcakes (or 'Tallcakes' in the book). Tofu 1-2-3 (Maribeth Abrams) has excellent recipes for blueberry muffins. There are countless veggie pot-pie recipes and scalloped potato recipes on the web. (just make sure to specify 'vegan' when you search). To BullyDawg, vegan cream cheese is available in many organic stores, and some large grocery chains, there are also recipes on http://www.randomgirl.com/recipes.html for cream cheese, and because it comes out a bit plain, dress it up with some herbs and spices. As for the eel, I myself have never tried it so would not know exactly what to use, but I expect it tastes a bit fishy, so I would try using something similar to the texture of the eel, if possible, and experiment adding kombu powder (it adds a fishy taste). To Liam, if you reside in Canada, Superstore carries great PC 'chicken' and 'beef' strips wit a really meaty texture and taste, so if you wouldn't mind chicken strips instead of chicken nuggets, try the crispy batter in the recipe out of the back pages in a free vegetarian starter kit, Shake N' Bake, or experiment with your own. To Lilly, any fake ground burger ('chicken', 'beef', or 'pork') works amazing in any kind of tacos. Fry some up and add taco seasoning, top with shredded spicy soy cheese, and you can't even tell the difference. To Beth, I feel your pain, I used to love that stuff, but I like this even better: The recipe for 'Not-Tella' in the Veganomicon. To Susan, Tofu 1-2-3 has great recipes for French toast, including coconut ones. To Jessica, try vegan marshmallows (not sure how well they melt, seeing as I cannot get them here), or try experimenting with agar powder. (A sea-vegetable derived gelatinous powder, for cutards, fillings, you can even make animal friendly 'Jello'). And finally, to Jillian, try the Veganomicon, or almost any other vegan cookbook, there are tons of (I won't say great, because I never liked fish lol, but it was good enough to fool my friend). As with BullyDawg, it is more about finding the texture of 'fish' that you like, adding Vegenaise, spices, and a bit of kombu powder. Sorry for the never-ending tips, but I love to cook and like to help out, so if you find any use from these, all the better. :)

Angel Food is a site where you can buy vegan treats, including vegan marshmellows, and even make-it yourself marshmellow packets.
Hells Yes! its just that amazing! Enjoy because they are delicious!

I miss sardines!
I do make Beef Stroganoff, but I use the shredded or ground "turkey". I sautee onions, mushrooms, add the "turkey", simmer for a few minutes; add fake sour cream. Season to taste with salt, white pepper,lots of dill, and some soy sauce or amino acid. Serve over noodles or rice.
