
After feasting on stuffing, green bean casserole, pies, cookies, and more over the last month and a half, I'm finally in the mood for something a little healthier, and I hear a salad calling my name. I decided to try this mock tuna salad—made mostly from chickpeas, veggies, and a small amount of vegan mayonnaise—over a bed of greens, but you could try it on a sandwich too.
Now, I have no clue if this salad actually tastes like the one it's named after—it's been way too long for me to remember—but regardless, it was yummy and satisfying. You can find this recipe and other easy, healthy salads in VegCooking.com's recipe database.

Mock Tuna Salad
4 cups garbanzo beans, cooked and drained
1 cup celery, finely chopped
1/2 cup onion, finely chopped
1-2 Tbsp. nutritional yeast flakes Vinegar-free pickle relish, to taste (optional)
Vegan mayonnaise, to taste
Sea salt, to taste
•Mix all the ingredients except the "mayonnaise" together, mashing the garbanzos slightly as you mix.
• Add the "mayonnaise" until the salad is as moist as you like.

I'm wondering why the recipe calls for vinegar-free pickle relish. Does it have to do with changing color of beans or interfering with the yeast? Thank you.

WOW this recipe is fantastic!
instead of the salad i decided to eat on a roll, and i added some chopped cucumbers and topped with sliced tomatoes! talk about hitting the spot. yum yum yum!

I was really excited about this recipe but when I went to make I realized I had hardly any of the ingredients. So I used what I had and came up with something totally different, but surprisingly yummy! I used chickpeas, onion, red pepper, tomato, mayo, cheddar cheese (vegan if you prefer), garlic powder, salt & pepper). Then I warmed it up and enjoyed it with toast.

Sesame meal (grind sesame seeds in a coffee mill if you can't find it), combined with mayonnaise, pickle relish, a bit of lemon juice (works without it, too), and salt make a delicious mock tuna salad. (From One World Family).

I made this recipe today (without the yeast) and it was AMAZING! I don't think it tasted exactly like tuna but it was still incredible. Thanks for such a great idea!

Crumble some Nori into it as well for more of a "seafood" type flavor. YUMO!
