
Are you stuck in a deli slices or PB&J rut when it comes to lunchtime sandwiches? Let's shake it up a bit. After all, it is Friday.
I recently stumbled upon an interesting sandwich recipe on Epicurious.com that uses sweet potato as the main filling. I was intrigued.
After making a few alterations to veganize, I found myself with a healthy and easy-to-prepare lunch. But I was curious—where did this sandwich come from? Sweet potatoes on bread is a combo I've never heard of, and I was curious if this is a common meal. I was raised in a family where sweet potatoes were either candied or whipped—that's it.
After a few minutes of Internet research, I found only the recipe below and one for a sweet potato and pineapple sandwich, but I'm convinced there must be more. Does anyone out there have more info on the use of sweet potatoes in a sandwich? Anyone?
Sweet Potato and Avocado Sandwich
1 small sweet potato, peeled and cut into 3 slices about 2 inches thick
1 Tbsp. plus 2 tsp. mustard
1 Tbsp. soy mayonnaise (try Vegenaise)
4 slices whole wheat bread
4 red onion slices
1/2 small avocado, peeled, pitted, and sliced
4 tomato slices
Salt and pepper, to taste
1/4 cup shredded vegan Monterey Jack cheese (try Follow Your Heart brand)
1/2 cup finely shredded lettuce
•Cook the sweet potato slices in boiling salted water until tender, about 15 minutes. Drain and rinse with cold water, then drain again. Let cool for 5 minutes, then cut each slice into two thinner slices.
•Whisk together the mustard and soy mayonnaise in a small bowl.
•Spread the mustard mixture on two of the bread slices. Top each with half of the onion slices, avocado slices, and tomato slices. Sprinkle lightly with the salt and pepper.
•Add a layer of sweet potato slices and half of the "cheese" and lettuce to each sandwich. Top with the remaining slices of bread.
Makes 2 servings

I had a sandwitch that had sweet potatoes on it when I was passing through Sedona Arizona. It also had this fig spread, tomatoes, cheese (this was before i was vegan) and spanich if I remember corectly. After that I always put sweet potatoes on my sandwiches if I have any left over.

This sounds great! Another way for me to eat sweet potatoes!
I like to make Sweet Potato Fries!! Cut them up decently and bake in the oven. I add Cajun Seasonings or just salt and pepper.
What a great combo! I can't wait!

Cafe Flora in Seattle has a Yam & Cheese with Pumpkin Seed Pesto Sandwich and a Chickpea and Roasted Yam Wrap with Tahini Sauce in their cookbook.

But also keep in mind that avocado's are poisonous to dogs and other animals. As much as I love the taste, I won't buy them.

I never heard of sweet potatoes and bread either --but I've never been one to turn down a good carb.

This is almost exactly the best lunch on the menu at The Dock Cafe in Stillwater, MN. Unfortuntately, they won't make it for dinner, but a sweet potato and avocado sandwich is definitely worth going out for lunch instead.

My favorite cafe, AVANTI, in Costa Mesa, CA has a yam sandwich that they put on a homemade wheat ciabatta.
They use organic cream cheese, but you could easily substitute Toffuti Cream Cheese. Their yams are whipped (likely with nothing more than Earth Balance or a tad of soymilk because you only taste the yam). On one side of the bread they put their homemade fennel seed mustard, topped with arugula. On the other side of the bread is the cream cheese, then the yam. The sandwich is amazing. Try it with bitter greens and vegan cream cheese because that is what makes this sandwich for me.

I make the same thing except for in a burrito w/ black beans. just cook the sweet potato in the microwave until it is soft. Make a burrito w/ black beans & put the sliced up avocado and sweet potato in it before you cook it like you would a normal burrito. the non vegan members of my family have cheese. you can also add salsa and vegan sour cream

I love the sweet potato sandwich up in San Francisco on 24th. The combo of flavors is amazing in your mouth. They use whole wheat bread, red onion, sweet potato, feta cheese, tomatoes, and a pesto/olive spread that's delicious. This is put together in front of you and served warm....great for in the car meals for travellers too!!

The Watercourse in Denver has a yummy wrap with sweet potatoes .... Whole wheat tortilla with cilantro pistachio pesto, grilled sweet potatoes, mushrooms, caramelized onions.

I could swear I've seen this recipe in either Health or Self magazine a few years back...I cut it out and put it back in my recipe box, but haven't made it. Thanks for the reminder; now I really have to try it (with the vegan adjustments, of course)!

I tried this sandwich except I baked the thinner sweet potato slices instead of boiling thicker slices. It was really delicious.
